AYAM PENYET PLATTER

I do love ayam penyet since I visited Wong Solo restaurant in Shah Alam few months back. The chicken was so tender, juicy inside and crispy at the outside. Since I'm craving for the juicy, tender and crispy ayam penyet and it's kinda difficult to find it (some place, their chicken too dry and the taste no so good) except Wong Solo, I made it on last Saturday. And the result was awesome! I got tender, juicy and crispy chicken! But I forgot about Terung Berlada .. :( I cooked Kangkung Belacan instead.


Ingredients

Fried Chicken

1. 1 whole chicken and cut it to 6 portions
2. 2 tbsp fennel seeds *
3. 2 tbsp cumin seeds *
4. 3 tbsp corinder seeds *
5. 1 tbsp tumeric powder (nak taruk yang hidup pun takpe) *
6. 5 shallots (pounded) *
7. 5 cm ginger (thinly sliced) *
8. 5 cm galangal (thinly sliced) *
9. Water to boil
9. Salt to taste *
10. Vegetable Oil (Enough to deep fried the chicken)
11. 1 stalk lemongrass (crushed) *
 (I tak taruk curry powder and white pepper)

 Sambal

1. 7 red chillies 
2. 3 clove garlics
3. 2 shallots
4. Salt to taste
5. Sugar to taste
(I tak taruk belacan nor cili padi)
6. Vegetable oil
7. 1 cup of water

Rice

1. 2 cup of rice (depend on you)
2. Water (depend on you rice)
3. 4 tbsp butter
4. 2 stalks of lemongrass (crushed)
5. Salt to taste
6. 5 clove garlics (pounded)
7. 3 cm ginger (pounded)

Chicken Soup

1. 2 shallots (pounded) *
2. 1 clove garlic (pounded) *
3. 1 cm ginger (pounded) *
4. 2 tbsp vegetable oil
5. 1 cinnamom stick *
6. 1 star anise *
7. 3-4 cup of water
8. Chicken bone
9. Salt to taste

Method

Chicken

1. Clean the chicken and drain the excess water. Mean while, toast the fennel, cumin and coriander seeds till fragrance and pound it (but do not turn it to powder).

2. Boil the water in a big pot, add in the chicken and * ingredients (tinggalkan sikit fennel, cumin and coriander seeds for coating) for 15 - 20 minutes. Drain the water and coat the cooked chicken with leftover spices.

3. Heat oil in a medium pot at medium heat. Make sure the oil hot enough before you place the chicken in it to deep fried. Deep fried the chicken till brown and normally it just took 5-10 minutes to brown. Do not overcook to get juicy chicken.

Sambal

1. Grind all the ingredients except sugar, salt and oil.

2. Heat oil in a medium sauce pan. Pour the grinded ingredients and simmer till the water absorbed. Add in the salt and sugar and simmer again till the sambal turn into paste.



Rice

1. Clean the rice and drain the excess water.

2. Melt butter in the rice cooker. Add in garlic, ginger and lemongrass and cook till brown or fragrance.

3. Add in the rice and mix them well. Pour in the water and leave it till the rice is ready to serve.

Chicken Soup

1. Heat oil in a medium sauce pan. Add in * ingredients and cook till fragrance. Add in the chicken bone, cook for 5-10 minutes and pour in the water.

2. Add in salt and boil for 20 minutes.


Serve with fried tofu, fried tempe, cucumber and kangkung belacan.

1. Note : Nak rebus ayam dengan santan pun boleh and lagi sedap.

SNOWY AT KITTEN COTTAGE

Last 10th November 2013, I sent Snowy to Kitten Cottage to boarding for few days. I found their website when I browsed for pet hotel because I need him to be more tame and can get along with any cats. Tapi kan, masuk je kat kaunter area dia dah start uncomfortable. Masa tu I dukung dia and dia duduk diam je masa I register tu.. Sebelah tangan dukung dia and sebelah lagi fill in registration form to check-in. Dah macam anak pulak dah!

This is the walkway dari kaunter ke cottage kucing-kucing tu. Dekat kaunter tu ada macam-macam display lah.. ada makanan kucing, ada pasir untuk kucing, cat tree and segala keperluan kucing lah senang cerita.

Once I tolak je glass door tu, si Snowy dah start hissing! OMG! Bertambah kuat bila dia nampak kucing-kucing yang di lepaskan penjaga tu sebab normally penjaga akan lepaskan kucing untuk main-main kat playground dia and jalan-jalan. Tak lah terperuk je dalam cottacge tu. Bila ada seekor kucing ni datang kat kaki I, lagi lah kuat dia hissing sambil meronta-ronta.. Kang lepuk kang baru tau!

Condo Cottage RM25/Night
Ini lah cottage Snowy.. Mula-mula penjaga suruh letak kat cottage yang boleh nampak kucing selalu. Dalam tu ada satu kain alas, I taruk je dia dalam tu terus dia berbunyi and terus keluar dari cottage. Agaknya dia dapat bau kucing lain yang sebelum ni tinggal kat situ dekat kain alas tu kot. Patut lah dia mengamuk!

Then penjaga tu kata letak kat cottage tepi lah yang takde kucing sangat sebab dia tak boleh nampak kucing lain, mesti nak hiss punya! Bila masuk dalam tu dia kurang sikit hissing and I taruk sekali dengan blanket dia supaya dia selesa.

Masuk je terus diam. Takut agaknya!

Ni namanya Kristy. Kucing ni dah 6 bulan kat sini sebab kena quarantine and tunggu masa je owner dia nak ambil. Dia bording kat sini sebab nak migrate pi Australia you allssssss! Dah lah gemok gedempol.. ekor cenonit je hahaha.. Dia la paling suka melawat Snowy tapi Snowy tak suka.. di marahnya kucing tu haha.

These two pictures sent by their guardian.. Oh lupa pulak nak perkenalkan siapa penjaga diaorang-diaorang ni semua. Nama dia Farhana and sorang lagi Leeya. Tapi yang assist I ialah Farhana.. Dia sent these two pictures via Whatsapp. Katanya "This is how he eat" untuk gambar kedua tu.. Ya Ampun, sedih I tengok cara Snowy makan.. Kenapa lah dia tak turun and makan properly? Ish ish ish.. Agaknya dia takut nak membelakangkan glass door tu kot sebab dia takut nanti dia tak nampak kucing lain pass by his cottage.


VIC Cottage RM70/Night
This is VIC Cottage.. Harganya ialah RM70.00 satu malam. Kalau Snowy duduk sini memang bahagia lah dia kan?? Tapi Mom dia tak mampu so duduk lah cottage yang harga RM25/Night ye :)

VVIC Cottage RM90/Night
Yang cottage besar ni ialah VVIC Cottage. Apa tu VIC and VVIC? VIC = Very Important Cat and VVIC = Very Very Important Cat. Ingat manusia je ada VIP VVIP? hahaha kucing pun ada tau! Kalau dia duduk sini agaknya tak nak terus balik langsung lah jawabnya!



Ha.. Ini pulak playground diaorang. Nak main ke, nak lompat ke, nak hi-tea ke, nak tertonggeng terbalik pun boleh kat sini. Tapi malangnya Snowy tak boleh main kat luar nor playground sebab dia suka hissing kat kucing lain.. :( 
Ini tempat grooming. Kitten Cottage juga ada terima kucing untuk grooming. Bersih je kan tempat ni. But honestly, Kitten Cottage ni memang sangat bersih! Dari depan sampai lah ke belakang and semua cottage sangat bersih! So you all jangan risau kalau nak boarding your cutie in here.

On afternoon 13th November 2013, I fetched him and I wonder how he going to be when he see me. Dia terlalu excited and kais-kais the glass door and nak keluar. Agaknya dah terlalu bosan tak tau nak buat apa 4 days 3 nights duduk kat situ.

"Oh thank God! Mom is here! I can't wait to go home.. hip hip hooray!"






Bila dah dapat keluar bukan main bahagia lagi dia berjalan ke sana ke mari tapiiiiiii  still hissing bila nampak kucing lain. Dia jenis tak terkam kucing tu.. Dia hissing je kuat tapi penakut! 

Nasib baiklah juga kucing yang kat sana tu jenis tame and takkan terkam kucing lain, if not jadi drama pulak kat situ.









Itu lah pengalaman Snowy kat sana.. And pengalaman I boarding my cat at pet boarding. Bila tanya nak pergi lagi tak stay kat hotel Kitten Cottage? "Tak nak!!" katanya.. siapa ada dua tanda seru lagi. :) Tapi nanti bila-bila I nak hantar lagi supaya dia tame enough and boleh get along with any cats.

MARINARA SPAGHETTI

Normally they use mussels for their marinara spaghetti but mine, I use crab instead :) Marinara spaghetti yang mahal lah tu kononnya.. hahaha.

Ingredients

1. 200gm spaghetti
2. 1/2 cup tomato paste
3. 1 ripe tomato (diced)
4. 3 garlic cloves
5. 1 onion (diced)
6. A pinch of dried rosemary *
7. A pinch of dried thyme *
8. A pinch of oregano powder *
9. A pinch of black pepper *
10. 1 tsp chili powder (kalau suka pedas boleh taruk lebih) *
11. Salt to taste *
12. 3 tbsp olive oil
13. 1/2 cup of water
14. 1 tube squid (slice into rings)
15. 6-8 medium prawns (peeled and halved)
16. 1/2 crab (kalau taruk sekor penuh lah pulak pinggan kan??)
17. 2 tbsp chopped coriander leaves for garnish


Method

1. Heat oil in a large saucepan over the medium heat, stir in onion and garlic and cook till fragrance. Add in the tomato paste, diced tomato and * ingredients and simmer for 15 minutes.

2. Pour in the water and simmer for another 10 minutes. Meanwhile, cook the pasta in boiling, salted water until al dente. Drain and toss in a little olive oil.

3. Add seafoods in the sauce and cook for 5-10 minutes (To maintain the freshness of seafoods, please do not overcooked them). Finally, add in the pasta and stir them well.

4. Pour the pasta into a plate and garnish with chopped coriander leave, ready to serve.

Note :

1. Please take note that I use my own recipe which I added thyme, rosemary, oregano, black pepper and chili powder in my marinara. The original recipe takde semua ni cuma omputih akan taruk dry white wine sebab tu lah bertambah power kot marinara diaorang. The taste was awesome to me.. Tapi kalau you all rasa yang biasa tu lebih sebab.. taste buds masing-masing kan? hehehe..



Kalau nak lebih sedap you may add mussels into it.. I pun mengidam mussels tapi itu je yang ada dalam freezer tu. Selamat mencuba!

SOTONG GORENG TEPUNG (Deep Fried Squids)

Most of us are seafood lover but you have to take note that too much of seafoods will caused you high choloesterol in your body. Specially prawns.. I believe all of you love to eat prawns very much and for 100gm of prawns contain 195mg (65% DV) cholesterol. So, do you still love to eat prawns?? The highest cholesterol food is.... EGG YOLKS! With 1234mg per 100gm serving or 411% of the DV.. Phew!! Terlalu tinggi dek non oi! Once you read this, cut off your daily meals of soft boiled egg (telur separuh masak), fried egg (telur mata kerbau), omelette and also scramble egg. Makan sekali sekala tak apa but do not take it frequently.

So today I would like to share with you one of squid recipes which is deep fried squids.


Ingredients

1. 2 tubes of squids (XL size)
2. 2 tbsp wheat flour *
3. 4 tbsp rice flour *
4. 1 egg white
5. 2 1/2 tbsp curry powder *
6. A pinch of salt *
10. 3 cups of vegetable oil

Method

1. Clean the squids and cut it into rings, drain and pat dry with kitchen paper towel.

2. Add the squids into the egg white and mix them well. Meanwhile, in large plastic bag, shake together * ingredients. Drain and add squids to flour mixture, shake to coat. Transfer to sieve, lightly shake off excess flour mixture.

3. Heat oil in a medium pot (betul-betul panas ok), deep fried the squids till golden brown. Once brown, drain the squids and place it on the kitchen paper towel to absorb the excess oil.

4. Serve with dipping sauce or chili sauce.


Note :
1. DV = Daily Value
2. Pastikan lepas cuci sotong tu betul-betul keringkan supaya nanti goreng tak meletup-letup and dapat coat tepung dengan sepenuhnya.
3. Pastikan minyak menggoreng betul-betul panas setiap kali nak goreng sotong tu sebab kalau kurang panas, tepung yang di salut tadi akan terkeluar.

Sebenarnya ini recipe ketiga untuk sotong goreng tepung sebab recipe pertama and kedua macam tak puas hati pulak. This round, my squids more crispy than previous. I suka sangat makan sotong goreng tepung dekat Uptown PJ.. Kat sana malam-malam ada banyak hawkers and this one, kedai dia kat corner sikit and nama kedai I lupa tapi tukang masaknya I ingat sebab I suka dia sebab dia handsome!! :) Nama dia Ivan.. dia masak dengan mak dia while pak nye pulak tukang ambil order. Oh Ivan, lama sungguh kita tak ketemu. Macho weh masa dia masak tu.. hahahaha! haih lah.. gatal sungguh!

PAPRIK AYAM ( Chicken in sweet and spicy sauce with kaffir lime fragrance)

Good day to you! How are you today?Sebut pasal paprik ayam ni my niece yang bongsu tu suka betul paprik ayam. Kat rumah paprik ayam..kat kedai pun paprik ayam. Ayam ayam ayam.. sudahnya gemok gedempol dia sekarang. I tak suka sangat makan ayam but since ayam goreng kat mamak tu tersangat lah sedap, hari-hari lunch I makan nasi ayam goreng sayur teh o ais, nasi ayam goreng sayur teh o ais, nasi ayam goreng sayur teh o ais! And sudahnya, pon gedempol jugak lah..
    
Ingredients

1. 500 gm boneless chicken
2. 4 tbsp chili paste (grinded with shallots and garlic)
3. 5-6 bird's eye chillies (crushed-add more if you like your paprik spicy)
4. 2 tbsp fish sauce (depend on you)
5. 2 tbsp sugar (depend on you)
6. 3 tbsp chili sauce
7. 1/2 cup of water
8. 1/2 cup cauliflower (cut into small piece) *
9. 1/2 cup carrot (cut into triangle) *
10. 1/2 yellow onion (devide by 3) *
11. 3-4 kaffir lime leaves
12. 1 red chili for garnish
13. Vegetable oil
14. Water to boil

(kalau ada kacang panjang boleh tambah)

Method

1. Boil water in a pot, add in chicken and cook for 5 minutes (don't cook too long). Strain and put aside.

2. Heat oil in a wok, pour in the chili paste and bird's eye chillies and simmer till fragrance. Add in water and let it simmer again for 5 minutes.

3. Add in fish sauce, kaffir lime leave, sugar, chili sauce and chicken. Cook for 15-20 minutes but if the gravy too dry you can add another 1/4 cup of water. Add in the vegetable * and cook till tender or till the gravy lil bit thicken. Garnish with sliced of red chili and ready to serve :)


Perut dah lapar wei! Tengok pulak gambar-gambar ni bertambah lapar lah tekak I ni. Jom lah kita makan tengahari dulu! Kalau nak guna recipe untuk daging pun boleh jugak. Guna step yang sama untuk daging tapi kena rebus lama sikit dari ayam and masak dalam sauce lama supaya daging meresap sauce paprik tu. Dah lah! Ayaq liuq dok bertakung dalam mulut ni ha.. jom kita pi makan! Selamat mencuba!

LAMB CHOP

Hari Sabtu lepas tak tau nak makan apa untuk dinner sebab perut rasa tak selesa and anak tekak pulak rasa tak nak makan something heavy. Kebetulan kat rumah kakak banyak sangat stok kepingan kambing tu so I pun bawa lah balik dua tiga keping.

I've decided to cook lamb chop and I marinate tak lama pun. It's about 20 minutes macam tu je.

Ingredients (One Serving)

1. 1 lamb chop
2. 2 garlic cloves (minced) *
3. A pinch of dried rosemary *
4. A pinch of dried thyme *
5. 1/2 tsp paprika *
6. Salt to taste *
7. A splash of olive oil *
8. Carrot, brocolli, french beans & cauliflower.

Method

1. Marinate the lamb with * ingredients for half and hour.

2. Heat the pan fry with medium heat. Add lamb and cook for 15-20 minutes both site. Place it on a plate and put a site.

3. In the same time, steam the veggy for 5 minutes, strain and gliss with garlic butter. Set it beside the lamb.

4. For gravy, I used the lamb juice and add a tablespoon of butter, lil bit of BBQ sauce and a pinch of salt. Stir occasionally till lil bit thicken.

5. Pour the gravy on top of the lamb and granish with caramelized onions.

Laksa Goreng (Fried Rice Noodle with Sardine Chunks)

Good day to you! It's been 6 days after my last update and I miss my blog damn much. I'm very busy with office thingy and there's no enough time to update new recipe for you. But, I still have time to cook for my hungry tummy :)

I tried laksa goreng last two weeks and the result was yummy! The ingredients same as Char Koay Teow and the taste much nicer with laksa noodle. But I think it is depend on the person, which I'm prefer laksa noodle instead of normal noodle (mee kuning).

I love to have experiments in my kitchen and last week I tried to cook the real laksa goreng which I used the same ingredients as mackerel broth. And taste was awesome and I won't cook mackerel broth anymore for my laksa. The fried laksa will do and satisfied my taste buds.


Ingredients (For one serving)

1. 200 gm rice noodle (laksa basah)
2. 2 tbsp chili paste (that grinded with shallots, garlic and shrimp paste - I always have them in my fridge)
3. 1 1/2 tbsp vegetable oil
4. 1 medium size sardine *
5. 1 torch ginger (finely sliced - use about 1 tbsp) *
6. 1 slice galangal (about 5mm thick) (grounded)
7. 1 bunch Vietnamese Mint Leaves (finely sliced - use about 1 tbsp) *
8. 1/4 tsp tamarind paste *
9. Salt to taste *
10. Seasoning powder *
11. 1 tsp dark soy sauce *
12. 1/4 cup water

Garnishes

1. Onion (finely sliced)
2. Cucumber (finely sliced)
3. Torch ginger (finely sliced)

Method

1. Clean the fish, remove scales and guts. In a pot, pour in water and  fish and boil for about 8-10 minutes. Strain the fish stock and let it cool. Discard the bones and break the fish meat into tiny pieces and put aside.

2. Heat the vegetable oil in a wok, stir in the chili paste and galangal and cook until fragrance in medium heat. Add in * ingredients and mix them well.

3. Pour in the water and cook for 5 minutes. Add in the laksa, stir well till the gravy absorbed. Garnish with cucumber, onion and torch ginger and ready to serve.

Ye betul I guna ikan.. Once you tried this, you won't craving for that mackerel broth anymore and believe me, this is awesome!
