SPAGHETTI COOKED WITH BABY BOK CHOY AND TOMATOES

I made vegetarian pasta last night as me super delicious dinner :)
One serving
Ingredients
80-100 gm dried spaghetti
1 cup baby bok choy (cleaned, rinsed and drained)
3 cloves garlic (finely chopped)
2 tbsp extra virgin olive oil
3-4 bird's eye chillies (finely sliced)
A pinch of dried parsley leaves
A pinch of oregano powder
1/2 tomato (diced)
1/4 cup cherry tomatoes (halved)
Salt to taste
Water to boil
Method
Note :
To remain crisp of baby bok choy, please do not overcooked it.
I try jadi vegetarian sekejap kot kot boleh loss weight :)

3-4 bird's eye chillies (finely sliced)
A pinch of dried parsley leaves
A pinch of oregano powder
1/2 tomato (diced)
1/4 cup cherry tomatoes (halved)
Salt to taste
Water to boil
Method
Bring a large pot of water to boil, add pasta and cook according to the directions on the package. Set
aside 1/4 cup of the pasta cooking water before you drain the pasta.
Heat
olive oil in a frying pan or medium sauce pan over medium heat. Add in
garlic, diced tomato, bird's eye chillies and cook till brown or fragrant. Add in the oregano powder, dried parsley leaves and stir them well.
Carefully
add the reserved pasta-cooking water into the sauce pan and bring it to
boil. Once boiled, add pasta and stir constantly for a minute. Simmer
till the water absorbed. Add in baby bok choy and cherry tomatoes and cook
for 10-15 seconds and ready to serve.
Note :
To remain crisp of baby bok choy, please do not overcooked it.

PRAWNS AGLIO OLIO SPAGHETTI

Hari ni I malas berceloteh. Sila lah tengok recipe tu ye.
One serving
Ingredients
80-100 gm dried spaghetti
6-8 L size prawns (peeled, deveined)
3 cloves garlic (finely chopped)
2 tbsp extra virgin olive oil
Salt to taste
3-4 bird's eye chillies (finely sliced)
1/4 cup corinader leave (finely chopped)
A pinch of chili pepper
Water to boil

MUSSELS IN SPICY COCONUT BROTH

How's your weekend buddies? I hope it went well and you enjoyed the weekend very much. Mine? AWESOME! :)
I got these last Saturday which makes my tummy so happy until the next of the day. :)
Ingredients
1kg fresh mussels (cleaned and drained)
10 bird's eye chillies *
3 stalks lemongrass (thinly slice) *
3 shallots *
2 cloves garlic *
Thumb size tumeric (pounded)
2 cups of coconut milk
1 cup water
Salt to taste
Method
Place those * ingredients in the food processor with a cup of water. Blend it till smooth.
Heat a heavy bottomed sauce pan over medium heat. Pour the blended ingredients into the sauce pan and boil for 10-15 minutes or till fragrant.
Add in mussels, tumeric and salt and mix them well. Cooking till the mussels slightly open and pour in the coconut milk. Stir constantly for few minutes and turn off the heat.
Note :
You can add tumeric powder if your broth looks pale.
I tak blend ubi kunyit sekali with other ingredients sebab tak nak food processor I turn to yellow :) So I tumbuk guna lesung batu.
Jangan masak santan terlalu lama sebab nanti santan akan pecah and santan mesti lah santan pekat.

RAISED BED GARDEN

Sebenarnya I sendiri belum ada bed garden ni tapi dah teringin sejak tahun lepas. Ye lah, siapa lah yang nak tolong I buat semua ni? Nak angkut papan bagai? Months ago, I ada cuba cari papan.. Ala papan yang macam orang kampung-kampung buat rumah tu.. Tapi malangnya 3-4 buah kedai hardware I pegi semua tak jual. Yang ada hanya lah kayu (which tak lebar macam papan tu) and papan playwood. Mana boleh pakai playwood sebab tak tahan lama. Sigh.
Kalau boleh I nak lah bed garden yang tinggi macam ni. Papan macam tu susah nak cari lah. Kalau kayu tu berapa keping yang I nak kena guna untuk dapatkan bed yang tinggi macam ni kan.
Tapi kalau tak dapat macam tu, satu tingkat macam kat atas ni pun boleh. I happy je hehehehe
Ini ada lah lapisan yang you all kena buat untuk bed garden tapi bagi pendapat I kalau nak taruk tanah terus pun boleh kot as long as tanah yang di pilih adalah baik. Yang penting adalah campuran tanah itu sendiri. Tapi kalau you all buat atas simen atau sebagainya selain tanah boleh lah kot ikut kaedah ni.
Ini adalah campuran tanah yang baik untuk sayur-sayuran. I rasa kalau tak taruk vermiculite tu pun takpe kot kan since susah sangat nak cari kat Malaysia ni. Jadi you all just campur compost dengan peat moss tu pun dah cukup cantik rasanya.
Ini cara pengairannya tapi kalau tak ada pun tak apa kan? Siram macam biasa je sudah. Kalau buat macam ni kena lah kos lebih.
Kalau nak jimat cari papan-papan terbuang aje tapi kalau kat tempat I ni susah nak cari papan terbuang unless ada orang renovate rumah lah. Boleh minta kat Pak Pak Indon tu, kot-kot diaorang dah tak guna lagi. Saveeee budget!
Bila lah impian nak tercapai kan? Nanti I dah buat, I tunjuk pada you all ye? :)

AYAM GORENG CARA PADANG (FRIED CHICKEN INDONESIAN STYLE)

I love this kind of fried chicken which crispy outside and juicy inside. Tapi kalau ayam goreng biasa pon sodap kan?? For those who are really into Ayam Penyek, you may try this once in a while.
Ingredients
2 pcs whole chicken leg (cleaned, with skin)
1/2 tsp black pepper
1/2 tsp cumin seed (roughly ground)
1/2 tsp fennel seed (roughly ground)
1 tsp salt (depend on you)
Water to boil
Vegetable oil to deep fry
Method
Boil water in a heavy bottomed sauce pan. Once boiled, add chicken and cook for 20 minutes over medium heat.
Turn off the heat, drain the water and leave it cool for few minutes.
Rub chicken with salt, black pepper, cumin seeds and fennel seeds. Put aside and leave it for 20 minutes or half an hour.
Heat oil in a heavy bottomed sauce pan over high heat. Make sure oil hot enough to deep fry. Add in chicken and cook till brown both sides. Normally it just took 2-3 minutes.
Drain the oil and pat dry with kitchen paper towel. Ready to serve.
Note :
You can add a pinch of tumeric powder to rub the chicken as well.
Kalau you all suka, boleh ketuk / penyekkan ayam dengan anak batu sebelum makan.

ENGLISH MUFFINS

This is my second trial in making English Muffins. My niece was here so I served her English Muffins for breakfast. She eat one muffin in less than two minutes? Oh gosh.. Dia kuat makan lately :)
This round was so PERFECT isn't it? I came up with scramble egg and chicken patty :)

GARDEN UPDATE : PART 6

Hari ni baru lah berkesempatan nak update tentang kebun I yang sekangkang kera tu. Sebenarnya banyak yang perlu di buat lagi dan ini cuma sebahagiannya. Nanti lah, kalau dah cantik esok, baru lah I update sepenuhnya ya. Dulu janji nak update tentang kenapa putik labu gugur pun belum update lagi. Maaf ya..
Pagi Ahad tu kemas lah sikit this area. Bukan apa Snowy tu suka sangat korek tanah kat sini tau. Sakit hati.. Mula-mula ada dua Thai Basil yang besar tu aje. Lepas tu I gatal-gatal campak potato yang dah tumbuh pucuk tu ke sini. Hidup lah pulak bagai johan. Tapi yang lainnya entah hilang ke mana kena korek dek Snowy macam mana lah I tak hangin satu badan?
Lepas tu bila basil tu dah besar kat tempat semaian I pun alihkan lah kat sini juga termasuklah halia tu :)
Thai Basil ni I semai guna benih. Alah.. biji selasih yang you all minum dalam air sirap tu. Biji tu I ambil kat pokok basil kakak I punya. Punya lah lama nak asingkan biji dari kepompong bunga tu. Maklumlah, biji dia halus sangat.
Pokok basil yang ini I ambil anak and tanam kat rumah I. Sebab I tengok banyak sangat anak basil ni kat rumah kakak I, I pun kebas lah sepokok dua.
Percubaan pertama tanam pokok kentang. Mudah-mudahan banyak lah ubi dia nanti. We will see you on early April 2014 in shaa Allah.
Sebenarnya I tak sure ini pokok cili merah atau pokok cili padi haha. Itu lah padahnya tak label pokok-pokok ni. Tapi rasanya pokok cili padi kot. Sama-sama kita tunggu bila berbuah nanti ye?
Dulu pokok pandan ni banyak and beranak-pinak sampai tak terurus. I sakit mata tengok jadi I cabut ke semuanya dan hanya tinggal yang ini. Ini pun I biarkan dalam baldi berisi air almost a month tau! Then baru tanam..punya lah lama. Nasib baik ok lagi hihi. Bila dah tanam gemuk pulak jadinya kan?
Rumpun yang pertama I ambil kat rumah kakak I. Dan rumpun yang kedua and ketiga ni I bawa dari rumah my Mom kat kampung. Yang kakak I punya tu memang besar dari my Mom punya tapi tak berapa wangi dan batangnye keras seperti banyak hampas. Serai pun ada beza kan?
Ini pulak tempat semaian. Tempat ni terletak bawah pokok mangga apple jadi takde lah panas sangat and benih akan tumbuh dengan jayanya. Oh ya pasu hijau kat depan ni I semai benih terung rasanya (pun lupa nak label. Lantak kau lah labu). Biar tumbuh besar sikit baru tau pokok apa kan?
Nanti I ada masa, I update tentang labu pulak ye.

KOAY TEOW GORENG (CHAR KOAY TEOW / FRIED FLAT RICE NODDLE)

Ingredients
1 packet flat rice noodle - koay teow
1 1/2 tbsp fish sauce
1 tbsp light soy sauce (Kicap Kipas Udang)
1 tbsp dark soy sauce (Kicap Pekat)
2 tbsp chili paste (Blended with shallots, garlics and shrimp paste)
2 cloves garlic (finely chopped)
1 handful bean sprouts
4-5 stalks Chinese chieve - cut 3 cm lenght(Kucai)
2 eggs
10 prawns (peeled and deveined)
1/4 cup vegetable oil
Method
Heat oil in a wok over high heat. Add garlic and cook till fragrant and pour in the chili paste. Simmer till fragrant and lil bit brown.
Add in fish sauce, dark soy sauce and light soy sauce. Cook for a minute.
Whisk eggs in a bowl and slowly pour at the edge of wok and mix them well.
Add koay teow, mix them well and stir constantly for 1-2 minutes.
Add in prawns and chives, mix them well. Once the prawns change colour to orange, add in bean sprouts and mix them well for 20 seconds.
Turn off the heat and ready to serve. You may serve with chopped bird eye's chillies for spicy taste.

SAMBAL IKAN KELI CARA PADANG (SPICY CATFISH IN PADANG STYLE)

Ramai di kalangan kita suka makan ikan keli kan? Sambal ikan keli, masak lemak keli salai dan sebagainya. Termasuk lah I. Tapi few years back, aduan rakyat kat TV3 memaparkan kolam peliharaan ikan keli di satu daerah di Perak telah menyebabkan pencemaran ke sawah-sawah di sana.
Pesawah-pesawah membuat aduan mengatakan air kolam ikan keli yang busuk telah di salirkan ke parit-parit yang mana air parit tersebut di gunakan untuk sawah-sawah diaorang.
Tinjauan yang di buat ke kolam ikan berkenaan, mereka dapati ikan keli tu semua di beri makan bangkai ayam yang telah di kisar. Sebab tu lah air di kolam-kolam tersebut berbau busuk. Kesian kan ikan-ikan tu berenang dalam air yang busuk.
Dari hari tu lah I tak makan ikan keli hehe. Tapi dari last year, I started teringin nak makan ikan keli balik cuma tak banyak macam selalu lah. So hari Sabtu lepas I masak sambal ikan keli tapi padang style.
Fried catfish
Ingredients
2 medium size catfish
1/2 tsp salt
1 tsp tumeric powder
2 cups vegetable oil
Method
Heat oil in a wok over medium heat. Meanwhile clean the catfish and pat dry. Rub with salt and tumeric and fry them till brown for both sides.
Drain the excess oil with kitchen paper towel and set aside.
Sambal
Ingredients
5 shallots*
3 cloves garlic*
6 red chillies (seeded)*
Thumb size shrimp paste*
Salt to taste
A pinch of seasoning powder (ajinomoto)
1 cup of water
1/2 tsp tamarind paste
1/4 cup vegetable oil
Method
Heat oil in a medium sauce pan / wok over medium heat. Using a food processor, blend * ingredients but please do not over blended.
Simmer the chili paste till fragrant and water absorbed. Add salt, ajinomoto, tamarind paste and water, mix them well. Cook till water absorbed for second time.
Pour the sambal over fried catfish and ready to serve.
Note :
Kalau nak hilangkan lendir ikan keli, rub dengan daun serai atau daun limau kasturi.
Semasa goreng ikan keli pastinya minyak akan meletup-letup, kalau tak rajin mop lantai, sila lah guna penutup kuali semasa menggoreng ya.. tapi jangan pulak tutup rapat.

Ramai di kalangan kita suka makan ikan keli kan? Sambal ikan keli, masak lemak keli salai dan sebagainya. Termasuk lah I. Tapi few years back, aduan rakyat kat TV3 memaparkan kolam peliharaan ikan keli di satu daerah di Perak telah menyebabkan pencemaran ke sawah-sawah di sana.
Pesawah-pesawah membuat aduan mengatakan air kolam ikan keli yang busuk telah di salirkan ke parit-parit yang mana air parit tersebut di gunakan untuk sawah-sawah diaorang.
Tinjauan yang di buat ke kolam ikan berkenaan, mereka dapati ikan keli tu semua di beri makan bangkai ayam yang telah di kisar. Sebab tu lah air di kolam-kolam tersebut berbau busuk. Kesian kan ikan-ikan tu berenang dalam air yang busuk.
Dari hari tu lah I tak makan ikan keli hehe. Tapi dari last year, I started teringin nak makan ikan keli balik cuma tak banyak macam selalu lah. So hari Sabtu lepas I masak sambal ikan keli tapi padang style.
Fried catfish
Ingredients
2 medium size catfish
1/2 tsp salt
1 tsp tumeric powder
2 cups vegetable oil
Method
Heat oil in a wok over medium heat. Meanwhile clean the catfish and pat dry. Rub with salt and tumeric and fry them till brown for both sides.
Drain the excess oil with kitchen paper towel and set aside.
Sambal
Ingredients
5 shallots*
3 cloves garlic*
6 red chillies (seeded)*
Thumb size shrimp paste*
Salt to taste
A pinch of seasoning powder (ajinomoto)
1 cup of water
1/2 tsp tamarind paste
1/4 cup vegetable oil
Method
Heat oil in a medium sauce pan / wok over medium heat. Using a food processor, blend * ingredients but please do not over blended.
Simmer the chili paste till fragrant and water absorbed. Add salt, ajinomoto, tamarind paste and water, mix them well. Cook till water absorbed for second time.
Pour the sambal over fried catfish and ready to serve.
Note :
Kalau nak hilangkan lendir ikan keli, rub dengan daun serai atau daun limau kasturi.

KAKIAGE (JAPANESE VEGETABLE FRITTERS)

Ingredients
1/2 cup wheat flour*
1/2 cup rice flour*
3/4 cup of cold water*
1/2 tsp baking powder*
Salt to taste*
1 handful bean sprouts
1 handful carrot (matchstick)
1 handful onion (thinly slice)
Vegetable oil for deep frying
P/S : You can add prawns and grated zucchini as well
Method
In mixing bowl, combine * ingredients and set aside to rest for 10-15 minutes.
Heat oil in heavy bottom sauce pan or wok over medium heat. Add the vegetables into the batter and mix them well.
Make sure the oil is hot enough and you can check the temperature by using chopstick. If the oil steadily bubbling when you put the chopstick, it's hot enough for frying.
Put spoonful of batter into the oil (you can fry 4-5 fritters in the same time) and cook for both sides till brown. Repeat the same action for remaining batter till finish.
Remove and drain the oil on paper towels. Serve immediately and enjoy it while it is still warm with chili sauce.
