TAKZIAH : ALMARHUM DYMM SULTAN AZLAN SHAH
BLACK SESAME MANTOU (ROTI KUKUS BIJAN HITAM)

I made mantou for this morning breakfast. I kneaded the dough last night and steamed it this morning before I left for work. It is so good to have fresh homemade bread for breakfast by the way :)
Adapted From : Makcik Manggis
Ingredients
3 cups pau flour
5 tbsp sugar (I just add about 3 - 3 1/2 tbsp sugar)
1 1/2 tsp yeast
2 tsp baking powder
1 tsp baking soda (Add on)
1 tsp bread softener (Add on)
A pinch of salt (Mine ; 1/2 tsp)
1 1/3 cups of milk (Mine ; 1 cup)
1/3 cup of warm water
1 tbsp vegetable oil
2 tbsp black sesame seeds
Method
Dissolved sugar in warm water and add in yeast and let it proof. The mixture will froth and look like beer bubbles.
Combine all the dry ingredients in a bowl and mix them well. Pour in yeast mixture, oil and milk into the bowl and mix until a dough forms and you can start kneading. Knead till smooth and not stick on your fingers.
Let it sit for an hour (covered) to proof. Punch down dough and knead for a minute. Devide dough about 50gm each. Make it round and place on the muffin liners. Let it sit for 20 minutes to proof until double sizes.
Make sure the steamer hot enough and steam over high heat for 12-15 minutes. Serve hot with chicken curry :)

CLASSIC OAT PANCAKE

I made pancake every Saturday but different flavour for each week. I tried new method in making pancake last Saturday and the result was super-duper fluffy pancake for our breakfast. 'Our'? Yes, because as usual, I will have morning picnic at my neighbour's porch :)
Normally dia akan masak mee goreng or mi segera goreng or meehoon goreng but last Saturday dia buat cucur udang. Oh kenyang!
2 eggs
4 tbsp melted butter
1 cup plain yogurt
1/3 cup fresh milk
Method
Separate white and egg yolks. Whisk egg yolks and sugar till colour change and pluffy. Pour in milk, yogurt, melted butter and mix them well.
Add in dry ingredients and mix them well. Set aside.
In another bowl, whisk the egg white till stiff peaks and pour into the batter and fold in gently.
Heat a non-stick pan over medium heat and lightly grease with butter. Pour 1/4 cup of the batter onto the pan for each pancake and spacing them about 1 inch apart. Check the underside of each pancake to make sure it’s nicely browned, then flip. Cook for 1-2 minutes for each side.
Serve hot with butter and honey or maple syrup.

HARI TUAIAN (HARVEST DAY)

Ini lah hasil kebun sekangkang kera I tu. Tuaian pada hari Sabtu. Bayam dan daun bawang putih tu I belum masak lagi. Daun bawang putih tu berbau kucai and berbeza sekali baunya dengan daun bawang merah tu. Kalau masukkan dalam omelette pun best jugak kan.
Serai and cili tu I buat masak tumis kunyit udang while bunga telang I masukkan dalam pancake untuk breakfast on Saturday morning :)
Kena menyemai sayur lagi lah nampak gaya nya sebab hanya ada bayam aje on the raised bed garden tu.

ASAM PEDAS DAGING

Ingredients
300gm beef (poached and cut into chunks or cubed)
5 shallots (finely pound) *
2 cloves garlic (finely pound) *
1/2 cup chili paste *
Thumb size shrimp paste *
Thumb size ginger (finely pound) *
1/2 tbsp tamarind paste (I guna asam jawa extra adabi)
1 tsp cumin seeds (toasted, pounded) *
1 tsp fennel seeds (toasted, pounded) *
1 tsp coriander seeds (toasted, pounded) *
1 tsp black pepper (toasted, pounded) *
1/2 tsp tumeric powder (kalau guna kunyit hidup lagi sedap, tapi I malas nak tumbuk hehe) *
2 stalks lemongrass *
3 kaffir lime leaves
Salt to taste
3 sprig vietnamese mint/coriander (daun kesum)
1/2 - 1 tbsp sugar (depend on you, for your liking)
4 tbsp vegetable oil
3 cups of water
Method
Heat oil in a medium heavy bottomed sauce pan / pot over medium heat. Add in * ingredients and simmer till fragrant. Add in beef and cook for 2-3 minutes.
Pour water into the sauce pan, add in tamarind paste, sugar, salt, vietnamese mint, kaffir lime leaves and cook till the gravy lil bit thicken or till the beef tender.
I don't add any vegetables (tomatoes/lady fingers/brinjals) in it but if you want to substitute tamarind paste with fresh tomatoes, yes you may.
This kind of asam pedas is similar with asam pedas ikan kembong that I posted in the previous entry. You may refer to the link Asam Pedas Ikan Kembong for recipe.
Makan dengan nasi panas berulam kan bendi rebus.. Heaven kan? :)

GARDEN UPDATE : PART 8

Dah lama tak update tentang kebun kan? So today nak update sikit tentang kebun yang tak serupa kebun tu :)
Ini pokok bunga telang yang I tanam few months back and as you can see there is no trellis yet for them. Sebab I malas nak buat hehe.
Finally! It's up! Sebab I kesian sangat lah kat pokok telang tu. Takde tempat dia nak memanjat. I did it myself okay! But just a simple trellis lah kan. Takpe lah as long as they can panjat happily.
Kat situ jugak lah I tanam pumpkin plants and dia dengan happy nya panjat pagar tu and terus panjat ke pokok mangga I yang kat luar pagar tu tapi berbuah sebijik pon tarak! At the end, I cabut semua pokok labu yang ada kat situ buat compost hehe.
Ini pokok Thai Basil tapi dah di gondolkan semalam. Lupa pulak nak ambil gambar sebelum di gondolkan hehe. 3 pokok I gondolkan semalam. Dua I bagi jiran sebelah and selebihnya I simpan for my stock.

Ini pokok halia yang I tanam tak ingat bila :) I saja campak kulit kerang kat pokok-pokok ni sebab ada yang kata kulit kerang ni pun baik untuk menyuburkan tanaman. Entah lah.. wallahualam.
Ini lah pokok daun kaduk. Daun yang I guna untuk kari kerang I hari tu. Buat Endah, ini lah dia pokok daun kaduk tu. I tak pasti di sana panggil dengan nama apa. Mungkin berbeza.
Ini raised bed garden I yang pertama and yang kedua tu masih belum ada tanaman lagi. Ini je pokok yang survived, bayam merah dan bawang putih. Pak Choy I habis di kerjakan oleh kucing-kucing jiran I. Sigh.
Tapi bayam ni pun dah rongak sana rongak sini di makan dek belalang. Sakitnya hati!
Ini pulak pokok cili padi I yang tumbuh sesat celah celah Purple Showers. Alhamdulillah.. rezeki jalan di tolak kan? :)
Nanti bila kebun I dah cantik baru I tunjuk keseluruhannya ye? Asyik nanti nanti nanti je kan? Entah bila lah tu hahahaha.

DAGING MASAK HALIA (STIR FRY GINGER BEEF)

Good day everyone! There's a lot of beef recipes that I would like to cook recently but I managed to cooked only one recipe from the list. It's ginger beef :)
There are few versions of ginger beef but I love to add lil bit soy sauce for mine.
Ingredients
300gm beef (poached and thinly sliced)
1 onion (cut to 6 wedges)
3 cloves garlic (finely chopped)
2 inch nob of ginger (peeled, cut lengthwise into matchstick shapes)
2 stalks spring onion (cut to 3cm length)
3 dried chili pepper
1 tbsp light soy sauce *
1 tsp baking soda *
1 tbsp corn flour *
1 tsp sesame oil *
1/2 tsp white pepper *
2-3 tbsp vegetable oil
1/4 cup of water
Salt to taste
Method
Marinate beef with * ingredients in a medium bowl for 20 minutes.
Heat oil in a wok over medium heat. Saute onion, garlic, ginger and chili pepper till fragrant. Add in marinated beef and cook for 5 minutes.
Pour in the water and cook till the water absorbed or till the beef tender. Add salt if needed and garnish with spring onions.
Ready to serve.
Dah lama sungguh tak update tentang kebun I kan? Sebenarnya semai benih banyak tapi jadinya hanya bayam saja sebab kucing neighbour I asyik buat business kat my raised garden bed tu. Sigh. Nanti senang I update tentang kebun sekangkang kera tu pulak ye.
