Ingredients
300gm beef (poached and cut into chunks or cubed)
5 shallots (finely pound) *
2 cloves garlic (finely pound) *
1/2 cup chili paste *
Thumb size shrimp paste *
Thumb size ginger (finely pound) *
1/2 tbsp tamarind paste (I guna asam jawa extra adabi)
1 tsp cumin seeds (toasted, pounded) *
1 tsp fennel seeds (toasted, pounded) *
1 tsp coriander seeds (toasted, pounded) *
1 tsp black pepper (toasted, pounded) *
1/2 tsp tumeric powder (kalau guna kunyit hidup lagi sedap, tapi I malas nak tumbuk hehe) *
2 stalks lemongrass *
3 kaffir lime leaves
Salt to taste
3 sprig vietnamese mint/coriander (daun kesum)
1/2 - 1 tbsp sugar (depend on you, for your liking)
4 tbsp vegetable oil
3 cups of water
Method
Heat oil in a medium heavy bottomed sauce pan / pot over medium heat. Add in * ingredients and simmer till fragrant. Add in beef and cook for 2-3 minutes.
Pour water into the sauce pan, add in tamarind paste, sugar, salt, vietnamese mint, kaffir lime leaves and cook till the gravy lil bit thicken or till the beef tender.
I don't add any vegetables (tomatoes/lady fingers/brinjals) in it but if you want to substitute tamarind paste with fresh tomatoes, yes you may.
