SALTED EGG SQUID

السَّلاَمُ عَلَيْكُمْ
Peace be upon you







Ingredients


1 tube squid (XL size)
2 salted egg
3 cloves garlic (finely chopped)
3-4 bird's eye chilies (finely chopped)
1 sprig curry leave
2-3 tbsp butter
A pinch of white pepper
4-5 tbsp corn flour
4 tbsp rice flour
Cooking oil for deep frying



Method


Cut the squid into rings about 5-7mm thick. Rinse the squid and drain. Pat dry with kitchen towel.

Combine the white eggs with white pepper and corn flour in a bowl. Add in squid into the batter, mix them well and marinate for half an hour. Drain the batter and dust with rice flour.

Heat oil over the high heat and deep frying the squid  until golden brown and crisp. Drain the excess oil and set aside.

Steam the egg yolks and mash until smooth. Melt butter in a wok over medium heat and saute chopped garlic, chilies and curry leaves till fragrant. Add in egg yolks and stir constantly to avoid burning. When the mixture bubbles, add in the deep fried squid. Stir-fry briskly to coat with the sauce. Once coated, turn off the heat and ready to serve.

      Saya skrg gemar kumpul pinggan macam ni. Sikit.. sikit saya ambil mak punya di kampung. Tak berani ambil banyak sebab nanti dia marah hahaha. Itu lah Kak Mala, nak berjalan-jalan ke blog yang lain pun tak sempat. Maafkan saya ya? Nanti ada masa lebih sikit saya jalan-jalan. Rindu sangat pada kawan-kawan blogger ni.
