KARI KERANG DENGAN PUCUK KADUK

Ingredients

1 kg cockles (rinsed and drained)
5 shallots *
3 cloves garlic *
1 thumb size ginger *
1/2 thumb size tumeric (pounded)
10 red chilies *
1 sprig curry leaves
2 stalks lemongrass (crushed)
10-15 piper sarmentosums
2 cup of water
1 cup coconut milk
1 tbsp sugar
1/2 tsp tamarind paste
2 tbsp curry powder
5 tbsp vegetable oil
Salt to taste




Method


Steam the cockles and remove from the shell and set aside.

Place all * ingredients in food processor together with a cup of water. Grinding until it turn to paste. Heat oil in a heavy bottomed sauce pan over medium heat and pour the * ingredients together with lemongrass, tamarind paste and tumeric. Simmer till the water absorbed.

Add in curry leaves, curry powder and cook for 2 minutes. Add in the remaining water and cook till the water absorbed for second time.

Add in cockles, piper sarmentosums, salt, sugar and mixed them well for few seconds. Pour in the coconut milk and cook till lil bit thicken. Ready to serve.



In my opinion, this kind of curry is super delicious and it has been admitted by my neighbor as well. I gave her a small portion for her lunch and she said that it was incredible delicious!

    Sedapnyerrr...!! Dah lame x masak kerang2 ni..buat rendang pun sedap gak kan...hehehe..tp sejak air kene catu ni..mmg xde mood betul nak masak.. nak2 plak sebulan dua ni x sihat... lagi laa... huhu

      Kat tempat I sepatutnya semalam kena catu dengan hari ni. Semalam dekat 9am macam tu air dah start slow pastu terus takde. Tapi I tak tutup paipnye pastu dalam 10-15 minit ada balik sampai lah subuh tadi. Dah tak di catu agaknya. Esok lusa okay lah tu kat tempat you. Memang sedap dear! Makan bertambah-tambah okay! Kalau masak rendang lagi sedap, sebab I hantu kerang rendah. Oh my.. terliur dah ni. Try lah buat recipe ni.. in shaa Allah sedap.

      Kalau di sini ia di panggil pucuk kaduk. Di Indonesia I tak pasti di panggil apa. Daunnya seperti di dalam gambar yang pertama di atas.

      Tidak lah pandai sangat pun. Mungkin sebab hobi kot :) Try la bila senang sure hingga menjilat jari. Jiran I kata, sedap macam kari orang tua-tua dulu-dulu hahahahaha

  6. That looks so good! I love curry and I've tried to make my own recipes of Thai and Indian curries. You must love to cook? Cooking is fun especially if you garden and can use fresh ingredients. I might try some of your recipes someday!

      Most of the recipe are Asian foods. You may try Thai Squid Salad for your lunch and have it with bread or rice. :)
