SEAFOOD PAELLA

Seafood Paella yang I buat ni ialah Paella yang tak cukup bahan haha. I couldn't found one of the main ingredients (saffron) in any stores nearby. Hari tu ada nampak di Giant atau Tesco, pergi cari tak ada lah pulok! Nak pegi Cold Storage pon macam malas je. So guna je apa yang ada... itu pun sodap! Tapi rasa macam nasi goreng hahahaha








Ingredients


1 1/4 cups rice ( I used normal rice instead of paella rice sebab tak jumpa cari)
2 - 2 1/2 cups of water - depend what kind of rice that you use (Supposed to use seafood stock or you can use chicken stock)
5 cloves garlic (finely chopped)
1 onion (diced)
1 tomato (diced)
1 tsp paprika
2 tbsp fish sauce
A pinch of dried thyme
1 small bunch coriander leaves(roughly chopped)
1/4 cup diced carrot
10 king prawns (shell on)
3 medium size squids (cleaned and cut into rings) 
1/4 cup vegetable oil / olive oil 
Lemon



Method


Rinse rice and drain, set aside.

Heat oil in a medium size skillet / pan over medium heat. Cook garlic, onion, thyme for several minutes until fragrant. Add in paprika, fish sauce and mix them well. Pour in the water and cook for 5 minutes until boiling.

Add in rice, mix them well and cook until the water absorbed. Turn to slow heat.

Add in seafoods, mixed them well and cover with lid. Cook for 5 minutes and sprinkle the diced carrot over the rice and cook till the rice fully cooked. 

Garnish with chopped coriander leave, a wedge of lemon and serve warm.
