CLASSIC OAT PANCAKE

I made pancake every Saturday but different flavour for each week. I tried new method in making pancake last Saturday and the result was super-duper fluffy pancake for our breakfast. 'Our'? Yes, because as usual, I will have morning picnic at my neighbour's porch :) 

Normally dia akan masak mee goreng or mi segera goreng or meehoon goreng but last Saturday dia buat cucur udang. Oh kenyang!




Ingredients

1 1/2 cups all purpose flour
1 cup oat
3 tbsp sugar
1 tsp baking powder
3/4 tsp baking soda
1 tsp salt
2 eggs
4 tbsp melted butter
1 cup plain yogurt
1/3 cup fresh milk


Method

Separate white and egg yolks. Whisk egg yolks and sugar till colour change and pluffy. Pour in milk, yogurt, melted butter and mix them well.

Add in dry ingredients and mix them well. Set aside.


In another bowl, whisk the egg white till stiff peaks and pour into the batter and fold in gently. 


Heat a non-stick pan over medium heat and lightly grease with butter. Pour 1/4 cup of the batter onto the pan for each pancake and spacing them about 1 inch apart. Check the underside of each pancake to make sure it’s nicely browned, then flip. Cook for 1-2 minutes for each side.

Serve hot with butter and honey or maple syrup.

  2. Kak senyum2 bila Honey sebut pasal 'picnic' depan rumah tu. Kat depan rumah kak ni berkelah malam2 makan nasi. Lapan tahun disini kak tambah berat badan dari 68 ke 80kg....Dah habis tak boleh pakai baju yang 'glamor2'....

    1. Yes my dear! Kali ni memang perfect! Gebus sgt! Mungkin cara separate telur putih and yolks tu yang membuatkan gebu selain dari soda and baking powder. Pancake jugak ye dak? :) Tapi I failed buat lempeng. hahaha

    1. Nadia, boleh. Susu tu perahkan sikit lemon atau masukkan sikit cuka. Jadikan buttermilk. In shaa Allah jadi.

  7. Beautiful pancakes, they look delicious! I wonder if the yogurt made it even more fluffier? Is this your own recipe? We love pancakes, my little girl enjoys them too. I have my own pancake recipe and make my own buttermilk, it's pretty easy. Have a great week! :)

    1. Hi Priscilla!

      This recipe adapted from other recipe that I found from google (plain pancake). I substitute buttermilk to plain yogurt as both of them will produce fluffy pancakes. And I add in oats for my pancake. To get fluffier pancakes, you may try to separate egg white and egg yolks.
