CHICKEN RICE BALLS

السلام عليكم
Peace be upon you


Since I'm craving for nasi ayam, I cooked chicken rice ball on last Saturday for my lunch. I memang senantiasa craving for somthing btw, and now I'm craving for mee bandung sedap. Tapi di sini susah nak cari mee bandung yang sedap. How I miss my hometown's mee bandung. Sigh.





Nasi

Bahan - bahan

2 1/2 pot beras (depend on you sebab pot beras kita berbeza)
Air rebusan ayam (juga depend on you)
5 ulas bawang putih (di hiris nipis)*
2 potong halia sebesar ibu jari (di hiris nipis)*
4 batang serai (di hiris nipis)*
2 sb butter

Cara

Cuci beras, toskan dan ketepikan.

Kisar bahan yang bertanda * dengan sedikit air rebusan ayam hingga hancur. Switch on rice cooker dan cairkan butter. Masukkan bahan yang telah di kisar dan tumis hingga naik bau dan sedikit garing.

Masukkan beras yang telah di toskan tadi. Gaul sebati dan masukkan air rebusan ayam. I sukat tinggi beras sama dengan tinggi air dari permukaan beras. Tapi kalau you all nak nasi yang agak kering, boleh kurangkan air. Tapi depend jugak on beras cap apa yang you all guna.

Gaul sebati, tutup dan biarkan masak. 

I tak taruk bunga lawang, kayu manis and pandan pun sebab halia, serai dan bawang putih tu dah cukup wangi. :)



Ayam

Bahan - bahan

1/2 ekor ayam
8 ulas bawang putih (di hiris nipis)*
2 potong halia sebesar ibu jari (di hiris nipis)*
1 sk five spices *
3 sb kicap cair *
1 sb sos tiram *
1 sb madu *
1 sk minyak bijan *
1/4 cawan air *
1 kiub pati ayam

Air secukupnya untuk merebus ayam
Minyak secukupnya untuk menggoreng


Cara 

Bersihkan ayam dengan cara menggosok badan ayam dengan garam. Ia akan menghilangkan lendir-lendir pada ayam dan menjadikan kulit ayam licin. Ayam di biarkan separuh dan tidak perlu di potong. Bilas, toskan dan ketepikan.

Rebus ayam bersama bersama kiub pati ayam selama 20 minit atas api yang kuat. Setelah masak toskan ayam dan simpan air rebusan tadi.

Kisar semua bahan yang bertanda * hingga hancur. Masukkan ayam di dalam mangkuk besar dan tuang bahan yang telah di kisar tadi. Gaul rata termasuk di bawah kulit ayam dan perap selama setengah jam. 

Selepas setengah jam, toskan ayam yang di perap tadi atau you all boleh gantungkannya. Toskan selama 20 minit.

You all boleh guna kuali atau periuk untuk menggoreng. Tak kisah asalkan ayam tu boleh tenggelam. Kalau tak nak tenggelam pun tak apa you all boleh balik balikkanya.

Panaskan kuali atas api yang kuat dan kurangkan ke api sederhana apabila minyak dah cukup panas. Gorengkan ayam atas api yang sederhana bagi mengelakkan hangus di luar dan mentah di dalam. Setelah ayam cukup masak, toskan dan ketepikan.

Potong ayam ikut kesukaan you all bila nak di hidang.



Sos Cili

Bahan - bahan

10 biji cili merah (di buang biji)*
8 biji cili padi *
6 ulas bawang putih (di hiris nipis) *
1 potong halia sebesar ibu jari (di hiris nipis)*
2 cawan air rebusan ayam *
1 sk cuka masak
1 sk garam
2 1/2 - 3 sb gula perang


Cara 

Kisar semua bahan yang bertanda * hingga hancur. Tuang ke dalam sauce pan dan masak atas api yang sederhana. Masukkan gula, garam dan cuka. Gaul rata dan masak sehingga sedikit pekat.


Sos kicap

Bahan - bahan

Lebihan perapan ayam
2 cawan air rebusan ayam
1 sb tepung jagung


Cara 

Tuang semua bahan ke dalam sauce pan kecuali tepung jagung. Reneh selama 20 minit atas api yang sederhana. Masukkan bancuhan tepung jagung dan masak hingga pekat.


Sup

Bahan - bahan

3 ulas bawang  putih ( di tumbuk)
2 ulas bawang kecil ( di tumbuk)
1 potong halia sebesar ibu jari ( di tumbuk)
1 bunga lawang
1 kayu manis
1/2 sk lada sulah 
2 sk serbuk sup
Sedikit garam
4-5 cawan air rebusan ayam
Lemak ayam
Kaki ayam
Leher ayam 
Daun sup dan daun bawang (di potong halus)

Cara

Panaskan periuk dan masukkan lemak ayam. Lemak ayam jangan di buang sebab boleh guna untuk tumis bahan sup. Biarkan hingga lemak keluarkan minyak.

Setelah minyak keluar boleh tumis bahan yang di tumbuk bersama bunga lawang,kayu manis dan serbuk sup. Tumis hingga naik bau dan sedikit garing. Masukkan kaki dan leher ayam dan gaul rata. Masukkan air rebusan ayam, garam dan lada sulah dan reneh selama setengah jam atau hingga kaki ayam lembut. Taburkan daun sup and bawang bila di hidang.


Bahan - bahan sampingan

Daun salad (I guna Romaine lettuce / Cos lettuce : kedai cina banyak jual)
Tomato
Timun (I guna timun Jepun)


Kalau you all nak kelainan, boleh kepal nasi tu bulat-bulat. I teringat Chicken Rice Ball kat Melaka yang sedap tu sebab tu lah I teringin nak makan nasi ayam hehe. 
Masa kepal tu basahkan tangan dengan kuah sup sikit, ambil nasi dan kepalkan. Nasi akan nampak berkilat sebab ada minyak dari sup tadi. Menarikkan kan?? Kalau bagi kat budak-budak sure diaorang suka and happy.



Rice

Ingredients

2 1/2 cups of rice
2 cups of chicken broth (or more, depend on you, for your liking ; you will get the chicken broth after you poached the chicken)
1/2 cup chicken broth (to grind the * ingredients)
5 cloves of garlic (thinly sliced)*
2 thumbs size ginger (thinly sliced)*
4 stalks lemongrass (thinly sliced)*
2 tbsp butter

Method

Rinse the rice for several times. Drained and set aside.

Gind all the * ingredients with 1/2 cup chicken broth in food processor. Switch on rice cooker and melt the butter. Pour the grinded ingredients and cook till fragrant and lil bit brown.

Add in rice and mix them well. Pour in the chicken broth, mix them well, covered with the lid and let it cook for few minutes.



Chicken

Ingredients

1/2 chicken
8 cloves garlic (thinly sliced)*
2 thumbs size ginger (thinly sliced)*
1 tsp five spices *
3 tbsp light soy sauce *
1 tbsp oyster sauce *
1 tbsp honey *
1 tsp sesame oil *
1/4 cup of water *
2 tbsp chicken stock

Enough water to poach the chicken
Enough cooking oil to deep-frying the chicken


Method

Rub all over the chicken with salt and under the skin as well. This process is to help you to get the smooth skin and also to remove the dead skin. Remove the chicken fat and save for soup.

Poach chicken over high heat for 20 minutes together with chicken stock. Once cooked, remove chicken from the chicken broth and place it in a large bowl. Save the chicken broth for other usage.

Place * ingredients in food processor and grinding till smooth. Pour over the chicken and marinade for half an hour.

Drain the chicken for 20 minutes. (Save the marinade sauce to make soy dipping sauce)

Heat oil in a heavy bottomed sauce pan over high heat. Once the oil hot enough turn heat to medium. Deep frying the chicken till golden brown. Drain the excess oil and set aside to cool.

Cut the chicken to small portion for serving.



Chili dipping sauce

Ingredients

10 red chilies (seeded)*
8 bird's eye chilies *
6 cloves garlic (thinly sliced) *
1 thumb size ginger (thinly sliced)*
2 cups of chicken broth *
1 tsp vinegar
1 tsp salt
2 1/2 - 3 tbsp brown sugar


Method

Place all * ingredients in food processor and grinding till smooth. Pour into a medium sauce pan over medium heat. Add in sugar, salt, vinegar and mix them well. Cook till the sauce lil bit thicken about 20 minutes.



Soy dipping sauce

Ingredients

Chicken marinade sauce
2 cups of chicken broth
1 tbsp corn flour

Method

Pour all the ingredients in a small sauce pan except corn flour. Simmer for 20 minutes over medium heat. Mix corn flour with lil bit water and pour into the sauce. Cook till lil bit thicken about 2-3 minutes.


Chicken Soup

Ingredients

3 cloves garlic (pounded)*
2 shallots (pounded)*
1 thumb size ginger (pounded)*
1 star anise *
1 cinnamon stick *
1/2 tsp white pepper *

Salt to taste
4-5 cups of chicken broth
Chicken fat (You got it when you clean the chicken)
Chicken feet (remove any scaly yellow outer skin, chop off the claws and discard)
Chicken neck (cut to 2 cm length)
1 tbsp chopped celery
1 tbsp chopped onion spring

Method

Heat a medium sauce pan over medium heat. Add the chicken fat and let it cook for 2 minutes until oily.

Add the * ingredients and cook till fragrant and lil bit brown. Add in chicken feet, neck and mix them well. Pour in the chicken broth and cook for half an hour . Garnish with spring onion and celery.

Romaine Lettuce
Tomato
Cucumber


Ini portion yang I kasi jiran sebelah. Di sebabkan anak dia yang besar ada dua orang so I kepal nasi besar-besar cenggitu. Makan seketul dah kenyang hahahaha.

I siram terus sup dan kicap atas nasi tu. Senang tak payah dua tiga bekas kan.

    Hahaha buat la... Memang leceh tapi rasanya kejap je kot. Sebab sambil rebus ayam dah boleh buat sos cili tu. Boleh makan bertambah-tambah tak perlu bayar lagi. Kalau kat kedai kena bayar lagi kalau bertambah hahaha.

    I write the recipe in English tomorrow for your convenience. By the way, I installed the translator app few weeks ago as you can see on your right hand side (under 'Members'). No, I don't cook everyday because it's too late when I reach home for dinner. I just cook on weekend. :) I'll notify you once I translated the recipe.

      Hehe si dia tu memang suka minta translate. Tak faham katanya. Sebab tu lah kebanyakkan recipe dalam ni I update in English sebab ada juga reader omputih. Tau, nasi kepai... seronok kan makan nasi kepai ni. Padahal bukan apa pun, sama je nasi hahahaha.

      Jenuh lah kalau I translate bahasa utagho hahaha.
