Last night I cooked couscous for dinner and I found it was not bad. :)
Ingredients
1/2 cup couscous
3/4 cup hot water
1 tomyam cube
3 cloves garlic (finely chopped)
4 bird's eye chillies (or more for your liking - finely sliced)
2 kaffir lime leaves (finely sliced)
A pinch of salt
A handful enoki mushroom
3-4 romaine lettuce leaves (shredded)
6-7 prawns (peeled, halved)
2 tubes squid (cut into rings)
2-3 tbsp vegetable oil
Method
Pour hot water into couscous's bowl. Covered and let it sit for few minutes till the water absorbed.
Heat oil in a wok/pan over medium. Add garlic, chillies, kaffir lime leaves, tomyam cube and cook till fragrant. Add in squids and prawns, mix them well and cook for 2 minutes. Add in vegetables, salt and mix them well.
Meanwhile, fluff the couscous with a fork and pour into the pan. Cook till the water absorbed. Ready to serve.
Memang sesuai pada yang nak diet tu :)

ReplyDeleteMe too! As you know, rice is the main dish for Asians. Sometimes, I need substitute rice with other grains due to high carbohydrate in it. How you have your couscous? Couscous with loads of vegetable perhaps?

ReplyDeleteAlah Kak Mala, apa yang nak di ketawakan hehe. Memang ramai yang tak kenal couscous ni dan tak pernah makan. Ha'ah dia bijirin cuma dah di proses sebab tu just tuang air panas aje bagi kembang. Hulled millet pun okay jugak cuma itu kena masak macam masak nasi. Kena masak atas api. Sedangkan quinoa pun orang tak kenal ini kan lagi couscous dan hulled millet kan?
