VIETNAMESE SPRING ROLLS

I love this kind of spring rolls because it is a healthy snack for munching. I accidently found the rice paper wrapper in the supermarket near my house. So I just grabbed it and came out with this super delicious Vietnamese Spring Rolls.


Ingredients

1. 2 round rice paper wrappers
2. 4 medium cooked prawns - peeled, deveined, halved (L size)
3. 2 ounces dried rice vermicelli ( I forgot to include in my rolls! Wuaaaaaaaa! )
4. 6 medium fresh mint leaves
5. 6 medium fresh cilantro leaves
6. 1 leave lettuce (chopped)
7. 1 medium cucumber, peeled and cut into very thin sticks about 7 cm lenght
8. 1 carrot (cut into very thin sticks about 7 cm lenght

Method

1. Bring a medium saucepan of water to boil. Boil rice vermicelli 3 to 5 minutes, or until al dente, and drain. Put aside.

2. Fill a large bowl with warm water. Dip one wrapper into the warm water for 4-6 second to soften. Lay wrapper flat. In a row across the center, place 2-3 shrimp halves, a handful of vermicelli, mint, carrot, cilantro, cucumber and lettuce, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.

Dipping Sauce
Ingredients

1. 2 tbsp lime juice
2. I clove garlic (minced)
3. 2 tbsp white sugar
4. 4 tsp fish sauce
5. 1/2 teaspoon garlic chili sauce

Method

1. In a small bowl, mix the fish sauce,  lime juice, garlic, sugar and chili sauce.

2. Serve rolled spring rolls with the fish sauce.

 I malas nak buat dipping sauce so just use ready made garlic chili sauce (Thailand brand) aje hahahaha. You can taste and smell the fragrance of mint and cilantro at the first bite! Nyaman wei bak kata orang Brunei or Sarawak.
