DAGING SALAI MASAK LEMAK CILI PADI SAMA BELIMBING BULUH

السَّلاَمُ عَلَيْكُمْ

Bahan-bahan

500gm daging salai, batang pinang(di hiris nipis)
6 ulas bawang merah* 
3 ulas bawang putih*
Sebesar ibu jari halia*
Sebesar ibu jari ubi kunyit*
10-15 biji cili padi*
3 batang serai (di titik)
3-4 helai daun limau purut
1 asam keping saiz kecil
8-10 biji belimbing buluh
5 sudu besar minyak masak
3 cawan air
2 cawan santan
Garam secukup rasa




Cara-cara

Panaskan minyak di atas api yang sederhana. Kisar bahan yang bertanda * hingga lumat dan tumiskan bersama serai hingga naik bau dan sedikit keperangan.

Masukkan daging, asam keping, daun limau purut, garam dan kacau sebati. Kemudian boleh masukkan air dan masak hingga daging empuk serta kuah sedikit pekat. Masukkan santan dan belimbing buluh, masak hingga belimbing lembut. Kacau sentiasa bagi mengelakkan santan pecah minyak.

ASAM PEDAS DAGING

Ingredients

300gm beef (poached and cut into chunks or cubed)
5 shallots (finely pound) *
2 cloves garlic (finely pound) *
1/2 cup chili paste *
Thumb size shrimp paste *
Thumb size ginger (finely pound) *
1/2 tbsp tamarind paste (I guna asam jawa extra adabi)
1 tsp cumin seeds (toasted, pounded) *
1 tsp fennel seeds (toasted, pounded) *
1 tsp coriander seeds (toasted, pounded) *
1 tsp black pepper (toasted, pounded)  *

1/2 tsp tumeric powder (kalau guna kunyit hidup lagi sedap, tapi I malas nak tumbuk hehe) *
2 stalks lemongrass *

3 kaffir lime leaves
Salt to taste
3 sprig vietnamese mint/coriander (daun kesum)
1/2 - 1 tbsp sugar (depend on you, for your liking)
4 tbsp vegetable oil
3 cups of water

Method

Heat oil in a medium heavy bottomed sauce pan / pot over medium heat. Add in * ingredients and simmer till fragrant. Add in beef and cook for 2-3 minutes.

Pour water into the sauce pan, add in tamarind paste, sugar, salt, vietnamese mint, kaffir lime leaves and cook till the gravy lil bit thicken or till the beef tender.









I don't add any vegetables (tomatoes/lady fingers/brinjals) in it but if you want to substitute tamarind paste with fresh tomatoes, yes you may.

Makan dengan nasi panas berulam kan bendi rebus.. Heaven kan? :)

DAGING MASAK HALIA (STIR FRY GINGER BEEF)

Good day everyone! There's a lot of beef recipes that I would like to cook recently but I managed to cooked only one recipe from the list. It's ginger beef :)

There are few versions of ginger beef but I love to add lil bit soy sauce for mine.





Ingredients

300gm beef (poached and thinly sliced)
1 onion (cut to 6 wedges)
3 cloves garlic (finely chopped)
2 inch nob of ginger (peeled, cut lengthwise into matchstick shapes)
2 stalks spring onion (cut to 3cm length) 
3 dried chili pepper 
1 tbsp light soy sauce *
1 tsp baking soda *
1 tbsp corn flour *
1 tsp sesame oil *
1/2 tsp white pepper *
2-3 tbsp vegetable oil
1/4 cup of water
Salt to taste



Method


Marinate beef with * ingredients in a medium bowl for 20 minutes.

Heat oil in a wok over medium heat. Saute onion, garlic, ginger and chili pepper till fragrant. Add in marinated beef and cook for 5 minutes.

Pour in the water and cook till the water absorbed or till the beef tender. Add salt if needed and garnish with spring onions.
Ready to serve.





Dah lama sungguh tak update tentang kebun I kan? Sebenarnya semai benih banyak tapi jadinya hanya bayam saja sebab kucing neighbour I asyik buat business kat my raised garden bed tu. Sigh. Nanti senang I update tentang kebun sekangkang kera tu pulak ye.

BEEF KORMA

Ingredients

1. 700gm beef (cut into chunks - cari yang batang pinang lembut sikit)
2. 1/2 - 3/4 cup korma powder (depend on you)
3. 1/2 cup vegetable oil
4. 5-6 shallots * pounded
5. 3 garlic cloves * pounded
6. 5 cm ginger * pounded
7. 1 stalk lemongrass * crushed
8. 3 star anise*
9. 1 Cinnamon stick*
10. 1 - 1 1/4 tbsp salt (depend on you)
11. 1/4 Ajinomoto (seasoning powder)
12. 1 cup coconut milk (depend on you. I tak nak lemak sangat coz kolestrol)
13. 2 potatoes (devide to 4 or halved, depend on you)
14. 2 red onions (devide to 4 or halved, depend on you)
15. 1-2 tbsp pounded toasted coconut (kerisik)
16. Enough Water
17. Coriander leaves for garnish

Method

1. Heat oil in a wok. Stir in the * ingredients till fragrance and brown. Pour in the korma power (mix with water and turn into paste first) and cook for 10-15 minutes. Pour in a cup of water and cook for another 20 minutes (supaya rempah kurma betul-betul masak).

2. Add in beef  and mix them well. Add salt, ajinomoto, kerisik and 1 cup of water, stir them well and cover the wok with the lid to tender beef. If  the gravy too dry you may add more water, cook for half an hour or till the beef tender.

3. Once the beef tender, add in coconut milk and potatoes, cook for 15-20 minutes, gradually stir and add in the onions. Cook for another 10 minutes and ready to serve. If the gravy too  thick you can add in 1/4 cup of water. Serve in the bowl and garnish with coriander leave.

Note :

1. Daging paling baik ialah daging batang pinang sebab ianya lembut dan sesuai untuk masak kurma sebab tak akan mengambil masa yang banyak. Since I tak dapat cari batang pinang dek kerana orang semua dok pakat serbu beli daging due to Raya Qurban tomorrow, so daging batang pinang habis. So beli lah daging pejal. Harga sekilo daging batang pinang antara RM27.00 - RM28.00 ikut kawasan. Daging pejal RM25.00 - RM26.00 sekilo. (The best meat for Korma is sirloin steak).

BEEF NACHOS

Salam.

Good day All! Everyone have a dream and my dream is to have dining area like this :


Why? I love having lunch or dinner facing the garden or something green and I love my dining area receive a lot of sunlight. It is just my dream and from now on I kena start seeking for Datuk or rich man wahuahuahuahua.

So for today, I would like to share with you Beef Nachos recipe.



Ingredients


1. 1 tablespoon olive oil 
2. 1 large onion, finely chopped  
3. 500g beef mince 
4. 300g can kidney beans, drained, rinsed  
5. 1 teaspoon Mexican chilli powder (I used normal chilli powder)
6. 1/4 tsp seasoning 
7. 2 tablespoons tomato paste 
8. 1/4 cup water  
9. 1/2 cup coriander leaves, chopped 
10. 230g packet corn chips  
11. 1 cup grated tasty cheese (I used cheddar cheese)
12. Sliced of red bell pepper and lettuce for garnish 


Method 

1. Preheat oven to 200°C. Heat oil in a non-stick frying pan over medium heat. Cook onion for 2 minutes, or until soft. Add minced beef. Cook, stirring with a wooden spoon, for 5 minutes or until browned. 

2. Add kidney beans, chilli powder, seasoning, tomato paste and water. Reduce heat to medium-low. Simmer for 5 minutes, or until thick. Stir through coriander. 

3. Arrange corn chips on a heatproof plate. Top with mince. Sprinkle with cheese. Bake for 15 minutes, or until hot. Top with salsa, avocado and sour cream. Ready to serve.

 
I love to have Nachos as dinner.







I guna cheese sikit aje.. takut gemok wei! Kalau lagi banyak cheese lagiii.....SEDAP kan? Hurm, sambil update  recipe sambil telan air liur. Sigh..




Si naughty boy ni dah tak nak makan ikan rebus campur nasi lagi sebab dia suka makan ikan rebus campur roti.. Hai la..! Anak Mat Saleh upenye dia ni.. (-.-')
