Apa khabar? Sihat kah? Lama tak ketemu ya hehehe. Hari ni nak share recipe Siakap Tiga Rasa atau Deep Fried Barramundi with Thai Style Sauce.
Ingredients
1 medium size barramundi fish
A pinch of salt
5 cloves garlic
10 bird's eye chilies (finely chopped)
2 red chilies (finely chopped)
1 1/2 tbsp fish sauce (depend on you)
2 1/2 tbsp sugar (depend on you)
2-3 tbsp lime juice (depend on you)
1/2 cup of water
3 tbsp corn flour
3 tbsp vegetable oil
Enough vegetable oil to deep frying
A handful chopped coriander leaves
Method
Clean the fish, rinse and pat dry with kitchen towel. Season with salt and coat with corn flour. Heat oil in a medium wok over high heat. Deep frying the fish until golden brown for both sides. Drain the excess oil and set aside.
Heat 3 tbsp vegetable oil in a wok over medium heat. Cook chopped garlic and chilies until fragrant. Pour in the fish sauce, add sugar, mix them well and cook for 3 minutes. Pour in the water, lime juice and simmer till the sauce lil bit thicken.
Once the sauce thickened, turn off the heat and pour over the fried barramundi and garnish with coriander leaves. Ready to serve.
