COCONUT-CRUMBED PRAWNS

Hello there! Sihat kah you all hari ni? Hari ni nak share satu lagi recipe yang simple yet delicious. Sesuai di makan bila-bila yang you all suka. Boleh juga di buat makan untuk minum petang :)



 


Ingredients


10 L size prawns (remove the shell except tail)
1/2 cup sweetened shredded coconut
1/3 cup plain flour
2 eggs
A pinch of salt
A pinch of white pepper
1/2 tsp paprika
Vegetable oil for deep frying



Method

Rinse prawns and pat dry with kitchen paper towel. Set aside.

Mix flour with paprika and white pepper. Whisk eggs together with salt. Coat prawn with the flour, dip into the egg mixture and roll onto shredded coconut. Repeat the same step for the remaining prawns until finish.

Heat oil in a heavy bottom sauce pan, deep frying the prawns until golden brown and crisp. Drain the excess oil.

Serve with tartar sauce, chili sauce and lemon wedges.

BUTTER PRAWNS

I cooked butter prawns accompanied by stir-fry spinach on the 1st of Ramadhan 1435h. Just a simple dishes for the first day. Makan sorang jadi tak perlu membazir :)


Ingredients

10 L size prawns
3 cloves garlic (finely chopped)
5-6 bird's eye chilies (thinly sliced)
2 tbsp butter
2 tbsp evaporated milk
1 sprig curry leaves
1 egg yolk
4 tbsp butter (for egg yolk)


Method

Clean the prawns, deveined and drain the excess water.

Melt butter in a sauce pan over high heat. Add garlic, chilies and curry leave and cook till fragrant and slightly brown.

Add in prawns and cook till it turn to red colour. Pour in milk and cook till the milk absorbed. Place the prawns in a plate and set aside.

Melt butter in a wok over high heat. Whisk the egg yolk and slowly pour into a wok. In the same time, you have to swirl the egg yolk with ladle in one direction. After a few seconds, you will see the mixture becomes foamy, keep stirring until you can see the egg floss and stir for another 10 seconds to get it crisp. Drain the excess oil.

Garnish the prawns with egg floss.


Note : I don't fried the prawns first sebab malas! :) And my egg floss tak nampak macam egg floss pun hahahaha.

UDANG TELUR MASIN (SALTED EGG PRAWNS)

Good day to you! I found the old pictures of salted egg prawns too :) Dah lamaaaaaa tak buat ni.

These pictures was taken past 2 years when I was at my hometown.


Ingredients

1kg medium size prawns
Vegtable oil (enough to deep-frying)
1 tsp salt
4-5 tbsp corn flour (to coat the prawns)
3 cloves garlic (finely chopped)
10 bird's eye chillies (finely sliced. add more for your liking)
3-4 tbsp butter
2 sprig curry leaves
5 salted egg yolks (hard boiled, smoothly smashed)
2 salted egg white (hard boiled, smoothly smashed)
1/2 cup evaporated milk (add more for your liking)

Method

Heat oil in a wok or heavy bottomed sauce pan over high heat. Meanwhile, rub salt all over the prawns and coated with corn flour.

Once the oil hot enough, deep-frying the prawns till golden brown. Drain the excess oil and set aside.

Melt butter in a wok over medium heat. Add garlic, chillies, curry leaves and cook till fragrant. Add in salted eggs, cook till bubbles for a minute and pour in the milk. Mix them well and cook till lil bit thicken. (If you like salty, you can add a pinch of salt in it)

Add prawns, mix them well and ready to serve. 


Hujung minggu ni boleh masak tapi nak cari udang yang besar-besar lah! Baru puas makan. Moh kite cari udang besar kat pasar borong. Pun dah lama tak gi pasar borong. Sigh.

Nowadays, kemalasan melanda la.. di tambah pulak dengan air yang di catu. Nak buat apa pun malas.

I was thinking to make sushi this weekend too. Tapi tengok lah macam mana nanti.


Macam nak tazkirah sikit hari ni. Kadang-kadang apa yang kita plan, apa yang kita impikan tak akan dapat. Kadang-kadang kita berusaha untuk sesuatu pun tak akan dapat. Macam I, 10 tahun I impikan untuk memiliki sesuatu. Macam-macam dugaan yang I tempuh dengan sabar.. Mahupun dugaan kecil dan besar yang di beri pada I, I tempuh dengan sabar. Mungkin Allah berikan apa yang I nak tu lambat, mungkin. 

Biarpun I kecewa dengan apa yang berlaku, I tetap bersyukur sebab sekurang-kurangnya I masih bernafas untuk terus berusaha. Allah beri I ujian maknanya dia 'memandang' I. Alhamdulillah.

Orang lain tak tau apa yang berlaku, jadi jangan lah kita menuding jari sesuka hati. I tetap berharap dan akan terus berdoa. Semoga Allah mendengar dan beri nikmat itu kepada I. Ameen.

THE STORY OF 23 RAMADHAN 1434 & SAMBAL UDANG (PRAWNS IN SPICY SAUCE)

 I had Nasi Goreng + Ayam Goreng Kunyit since Monday and I bought it from a restaurant near my house. Their Ayam Goreng Kunyit was nice and same goes to Nasi Goreng and still ordered for it on Tuesday evening for IFTAR. And yesterday, I couldn't refused to have it again for the third time for IFTAR so I cooked by myself. I had nasi goreng (Similar to Yong Chow Fried Rice, but I use my own recipe), sambal udang, ayam goreng kunyit and mix salad. It was fixed my craving :)


Ingredients

1. 6-7 peeled prawns (L size)
2. 2-3 tsp fish sauce
3. 3 tbsp chilli paste (Chilli paste ingredients : dried chilli, shallot and shrimp paste)
4. 1 tbsp sugar
5. 1/2 onion (cut to 6)
7. 2 tbsp ketchup (tomato sauce)
8. 2 tbsp cooking oil
9. 1/4 cup of water

Method

1. Heat oil in a wok. Once hot, add chilli paste and stir well till simmer and fragrance. Add water and let it simmer again.

2. Add in the fish sauce, sugar, ketchup and onion. Stir and mix them well. Leave it for a minute.

3. Add in the prawns and stir well for a minute, turn off the fire and ready to serve.


Note :

1. Stir in the prawns for a minute is the best way to get the crunchy and fresh prawns.

Tengok lah butiran nasi tu. Cantik and perfect je kan? 

The fragrance of coriander leaves made the salad more delicious and smelled good.

As I told you before, don't overcooked the prawns because you won't get the juicy and fresh prawns.

I loveeeeee that Ayam Goreng Kunyit :)

PRAWN SCAMPI

Salam.

Today I would like to share with you the Prawn Scampi recipe. Since I don't have any crusty french bread in my kitchen, I substitute with Massimo bread loaf (LOL).


Ingredients

1. 500gm pound jumbo prawn, shelled and deveined
2. Salt and freshly ground black pepper
3. 2 tbs unsalted butter
4. 2 tsp minced garlic
5. 1/4 cup dry white vermouth (I skip this ingredient)
6. 1 tbs freshly squeezed lemon juice
7. 1 tsp finely chopped flat-leaf parsley leaves
8. 1/4 tsp grated lemon zest

Method

1. Put the prawn on a large pie pan or plate and pat them completely dry with a paper towel. Arrange the prawn so they lay flat and are evenly spaced.

2. Heat the pan over medium heat. Season the prawn with salt and pepper. Add the butter into the pan. When the foaming subsides, raise the heat to high, and add prawn over the pan so the prawn fall into the pan all at once. Cook the prawn without moving them, for 1 minute. Add the garlic and lemon juice, turn over the prawn and cook for another 1 minute or until the liquid slightly thickened.

3. Stir in the zest and parsley into the pan. Transfer the prawn to a bowl or plate. Ready to serve and serve with slices of french bread.


 The dish  is suitable for those who are on diet :)

The shrimp look so crunchy isn't it?
