SAMBAL NASI LEMAK

I cooked a simple Nasi Lemak (Rice cooked with coconut milk and few spices) for yesterday brakfast. Sebab ada orang minta nak makan sambal kerang. So dengan rela hati pegi lah pasar basah cari lauk untuk lauk nasi lemak lepas solat subuh tu. Siap mandi-mandi and nak pakai baju nampak jiran sebelah dah tunggu tepi pagar rumah. Katanya "Oi... dah 7.30am!" I pun jawablah "Eh dia jugak kata semalam nak pergi pukul 7.30am??" Kelam kabut lah I bersiap! Lepas tung tang tung tang masak kitaorang pun picnic lah kat depan rumah dia macam biasa. Jiran I pulak buat koay teow goreng :)

Tapi hari ni bukan nak update pasal resepi nasi lemak tapi nak update resepi sambalnya :)



Ingredients


200-300gm dried chillies
1 1/2 onions (thinly sliced, bawang besar ye kawan-kawan)*
1 1/2 onions (slice about 0.5cm thick)
6 cloves garlic (thinly sliced)*
3 thumbs size shrimp paste*
1 thumb size garlic *
1 1/2 tsp tamarind paste (I guna yang asam jawa extra Adabi)
Brown sugar (depend on you ; for your liking, You can substitute with gula melaka)
Salt (depend on you ; for your liking)
1 bay leaf
4 cups of water
3/4 cup vegetable oil


Method

Seeded and soak dried chillies in water for an hour. Place dried chillies, a of cup water and * ingredients in the food processor and grind till it turned to paste.

Heat oil in a wok over medium heat. Pour in chili paste, simmer till fragrant and water absorbed. Add in a cup of water and simmer till the water absorbed for second time. Once the water absorbed, add in the remaining 2 cups water, brown sugar, salt, bay leaf, tamarind paste and sliced onions. Cook till the water absorbed for third time.

You can use the sambal to cook Sambal Kerang or Sambal Udang. Senang hidup! :)

Caranya, ambil sikit sambal yang dah masak tadi dan masukkan ke dalam periuk atau kuali yang lain. Panaskan sambal kemudian masukkan udang atau kerang. Masak udang selama 1-2 minit and sedia di hidang. Udang tak perlu masak lama sebab nak mengekalkan kesegarannya.


Then, boleh lah di gandingkan dengan it accompaniments seperti ikan bilis, hirisan timun, telur rebus dan kacang. I malas nak goreng kacang tapi segan lah nak letak pistchios and cashew nuts pulak sebab macam tak kena je hehe.

THE STORY OF 23 RAMADHAN 1434 & SAMBAL UDANG (PRAWNS IN SPICY SAUCE)

 I had Nasi Goreng + Ayam Goreng Kunyit since Monday and I bought it from a restaurant near my house. Their Ayam Goreng Kunyit was nice and same goes to Nasi Goreng and still ordered for it on Tuesday evening for IFTAR. And yesterday, I couldn't refused to have it again for the third time for IFTAR so I cooked by myself. I had nasi goreng (Similar to Yong Chow Fried Rice, but I use my own recipe), sambal udang, ayam goreng kunyit and mix salad. It was fixed my craving :)


Ingredients

1. 6-7 peeled prawns (L size)
2. 2-3 tsp fish sauce
3. 3 tbsp chilli paste (Chilli paste ingredients : dried chilli, shallot and shrimp paste)
4. 1 tbsp sugar
5. 1/2 onion (cut to 6)
7. 2 tbsp ketchup (tomato sauce)
8. 2 tbsp cooking oil
9. 1/4 cup of water

Method

1. Heat oil in a wok. Once hot, add chilli paste and stir well till simmer and fragrance. Add water and let it simmer again.

2. Add in the fish sauce, sugar, ketchup and onion. Stir and mix them well. Leave it for a minute.

3. Add in the prawns and stir well for a minute, turn off the fire and ready to serve.


Note :

1. Stir in the prawns for a minute is the best way to get the crunchy and fresh prawns.

Tengok lah butiran nasi tu. Cantik and perfect je kan? 

The fragrance of coriander leaves made the salad more delicious and smelled good.

As I told you before, don't overcooked the prawns because you won't get the juicy and fresh prawns.
