SALTED EGG SQUID

السَّلاَمُ عَلَيْكُمْ
Peace be upon you







Ingredients


1 tube squid (XL size)
2 salted egg
3 cloves garlic (finely chopped)
3-4 bird's eye chilies (finely chopped)
1 sprig curry leave
2-3 tbsp butter
A pinch of white pepper
4-5 tbsp corn flour
4 tbsp rice flour
Cooking oil for deep frying



Method


Cut the squid into rings about 5-7mm thick. Rinse the squid and drain. Pat dry with kitchen towel.

Combine the white eggs with white pepper and corn flour in a bowl. Add in squid into the batter, mix them well and marinate for half an hour. Drain the batter and dust with rice flour.

Heat oil over the high heat and deep frying the squid  until golden brown and crisp. Drain the excess oil and set aside.

Steam the egg yolks and mash until smooth. Melt butter in a wok over medium heat and saute chopped garlic, chilies and curry leaves till fragrant. Add in egg yolks and stir constantly to avoid burning. When the mixture bubbles, add in the deep fried squid. Stir-fry briskly to coat with the sauce. Once coated, turn off the heat and ready to serve.

THAI SQUIDS SALAD

Peace be upon you


The last time I cooked this kind of dish, about half year ago. As I remembered, it was on fasting month, which is July 2013.

The fresh squid is the most important ingredient for this kind of salad. Fresh squid will produce delicious and crunchy salad.

Pictures kat bawah ni was taken on July 2013.



Ingredients

4 XL size squid tubes (cleaned)
1/2 cup of fish sauce*
1/2 cup of brown sugar (or for your liking)*
10 cloves garlic (finely chopped)*
1/4 cup lime juice*
3 stalks lemongrass (finely sliced)*
8-10 red bird's eye chillies (finely sliced and add more if you like spicy salad)*
1/4 cup of fresh coriander leaves (roughly chopped)

2 cups of water

Method

Clean the squid tubes by cutting through one side so that they lay flat as a single sheet. Score crossways on inside of tubes so that squid curls when cooked (pineapple cut). Cut in half lenghtways and then into strips about 1-1.5cm wide.


Meanwhile, boil water in a medium heavy bottomed sauce pan over medium heat. Once boiled, turn off the heat and add the squid into the hot water for a minute. Drain and put aside.


Mix well all the * ingredients and add in squids.


Garnish with coriander leaves and ready to serve.


Note : 

Celur sotong dalam air yang dah boiled tadi selama seminit sebab nak dapatkan tekstur sotong yang rangup.

(Do not over boiled the squids to maintain their freshness and crunch)

1ST RAMADHAN 1434 HIJRAH

Salam.

How's your first day of fasting? Is everything went well and okay? So what you had for sahur (early breakfast) this morning? Mesti meriah ek hari pertama puasa mesti masak berbagai-bagai lauk pauk for sahur. Mak-mak la yang lebihnya dok tung tang tung tang kat dapur memasak. Siap masak barulah anak-anak masuk dapur untuk makan. Alah biasa la tu.. bukan anak bujang aje yang cenggitu, anak DARA pun cenggitu! Ish ish ish.. sian kat mak tu masak sengsorang aje. So hari ni just nak tayang apa yang I makan for today's sahur.


Subuh-subuh makan pedas, gilo ko apo? Habih, then tak tau dah nak masak apo la'i.. ada sotong jo.. den masak la sambal. Nak buek lemak kuning santan lupo beli la haih semalam.
Sambal tu I tumis malam tadi, jadi subuh tinggal potong sotong and campak aje dalam sambal tu and masukkan recipe 'rahsia' sekali supaya berkali-kali ganda kesedapannya :)


Sayur pun goreng subuh jugak sebab kalau goreng malam tadi jadi tak sedap lah sayur tu. Nasi pun masak subuh, baru sedap makan! Pastu potong timun sikit buat ulam (tapi dah tak nak makan dengan sambal belacan sebab sambal sotong tu pun dah cukup pedas!). Punya lah pedas sambal ni, makan sambil lap hingus..haih. Masa tetamu (Aunty) datang dari Perak haritu, buat sambal udang and guna cili kering yang sama. Aunty boleh kata tak pedas?? Ish ish ish.. Atok and I makan kepedasan dia boleh makan slumber aje. Kuat betul taste buds dia.


You all nampak tak apa dia tu? Alaaa.. yang kat dalam tube sotong tu.. Yes, of course! Telur sotong la..apa lagi? Suka betul I makan telur sotong ni. Kalau dengan nephew I yang kecik tu, berebut nak makan telur sotong! Ha ha ha. Takde taste pun sebenarnya telur ni tapi mungkin tekstur dia yang membuatkan kita orang suka. Siapa suka jugak telur sotong ni angkat tangan! :)

Nak tau tak kenapa sambal I kali ni tersangat lah pedas? I salah beli cili kering!!! Uwaaaaaa.... masih banyak lagi cili kering tu ntah bila baru habis. Ntah kenapa haritu I terbeli cili kering tu.. Ni mesti dek kerana tarikan cili tu suruh beli dia, sebab tu I terbeli. Kalau cili kering yang rasa dia tak berapa pedas, bentuk cili kering tu agak kedut and 'kerinting'. Itu baru lah tak pedas macam gambar kat bawah ni :

Janganlah korang semua tertipu dengan kecantikan dan keelokkan cili kering jenis ni. Pedas gila okay!
Rasanya I akan beli cili kering lain lah and tak nak guna yang balance yang masih banyak tu. Tak tahan wei.. pedas sangat!

Harini you all nak masak apa for buka puasa? I tak tau lah nak masak and masak apa.. silap-silap, kedai makan dekat dengan rumah I tu yang akan jadi mangsa hahaha.

MY HOBBY AND THAI SQUID SALAD

Salam.

I love gardening and I think lot of us love gardening too. But it is not fun gardening alone because sometimes I need some help from a gentleman to carry all the soil bags or digging job. Could I have a small garden like this?

I jugak suka kalau ada small farm which is no need to purchase any vegetables since I planted all the vegetables my own. I ada tanam kangkung tapi all the kangkungs gone dek kena makan dengan anak siput ****! Ish geram sungguh!

Bahagianya la hai hidup kalau dapat small farm macam photo kat atas ni. Every weekend pi tengok kebun at 7 o'Clock in the morning while SNOWY running here and there, chasing on me while I'm checking all my veggies. Indouh hidup ni weiii!!

Jom lah kita tengok recipe kita for today. Ada orang terliur-liur tengok kerabu sotong I tu. So, I would like to share with you the recipe so that you can do it by yourself. Kalau nak I yang buat jauh la pulak you all semua camno den nak nganto?

Ni nak tunjuk Thai Squid Salad tu je. Ini lunch box haritu ntah kurun bila ntah.

Ingredients

1. 4 XL size squid tubes (cleaned)
2. 1/2 cup of fish sauce*
3. 1/2 cup of brown sugar (or for your liking)*
4. 10 cloves garlic (crushed and finely chopped)*
5. 1/4 cup lime juice*
6. 3 stalk lemon grass (finely sliced)*
7. 8-10 red birdseye chillies (finely sliced and add more if you like spicy salad)*
8. 1 cup of fresh coriander leaves (roughly chopped)

Method

1. Clean the squid tubes by cutting through one side so that they lay flat as a single sheet. Score crossways on inside of tubes so that squid curls when cooked. Cut in half lenghtways and then into strips about 1-1.5cm wide.
2. Meanwhile, boil the water in a medium sauce pan. Once boiled, turn off the gas and add the squid into the hot water for a minute. Drain and put aside.
3. Mix well all the * ingredients and add the squid.
4. Garnish with coriander leaves and ready to serve.

Ini orang malas namanya. Potong bentuk nanas kasar betul!

Sedap wei makan dengan nasi panas-panas. Ooo mak ai.. terliur den bila teringat! Dah lah puasa hari ni uh uh uh. You all dah habis ke bayar puasa? I hari ni baru lah habis bayar..tup tup pejam celik pejam celik Rabu minggu depan dah 1 Ramadhan..In shaa Allah.

You might try this recipe during Ramadhan and kompom licin!
