DAKGANGJEONG (CRISPY KOREAN FRIED CHICKEN)

Awal bulan lepas, a friend of mine tag video masakan Korea di FB. Try katanya. So kita pun try lah.. sedap rupanya buat kudapan hihi. Macam biasa lah kita perap gambar lama sikit baru update blog.

Maaflah, sejak akhir-akhir ini malas sungguh nak ambil gambar dengan props tu semua. Nanti rajin I tangkap gambar cantik-cantik tau.



  


Crispy Chicken



Ingredients

1kg chicken wings
3 cloves garlic (finely chopped)
A pinch of salt
1 cup potato starch (or more)
Enough vegetable oil to deep frying



Method


Cut chicken wings into two. Clean the chicken wings and drain the excess water. Marinate chicken wings with mince garlic and salt for 10 minutes. 
Pour the potato starch into a medium bowl. Coat chicken wings with flour one by one until finish. 

Heat oil in a bottomed sauce pan over medium heat. Once the oil hot enough, deep frying the chicken wings until crisp. Once all the chicken wings has been fried, fried again until golden brown. This is we call as doubled frying. Set aside.




Sauce



Ingredients


2 cloves garlic (finely chopped)
2 tbsp vegetable oil
1 tbsp soy sauce
1 tbsp mustard
1 tbsp vinegar
5 dried chilies (cut into two)
3 tbsp honey
2 tbsp brown sugar (depend on your liking)
1 cup of water
1 tbsp toasted sesame seeds
1 handful toasted peanuts (I tak taruk sebab malas nak toast hihi)



Method


Heat oil in a frying pan over medium heat. Sautee garlic and dried chilies until fragrant. Pour in the soy sauce, mustard, vinegar, honey and sugar. Stir constantly and cook till bubbles. Pour in the water and cook the sauce until thickened. 

Add in the crispy chicken wings into the sauce and mix them well. Turn off the heat, place the chicken wings onto a plate and garnish with toasted sesame seeds and peanuts. Ready to serve.



Note :


Why I doubled frying? To get crispier chicken but juicy inside.


If you have no potato starch, you may substitute with corn starch.

KUNG PAO CHICKEN WITH CHILI PEPPERS

Kenapa kat Malaysia takde boxing day huh? Sigh... Kalau ada, pukul 5am I dah terpacak kat shopping mall tu :)

Hari ni I nak share recipe orang malas which ayam masak kicap namanya tapi in Chinese style.



Ingredients

2 skinless chicken breats
3-4 cloves garlic (finely chopped)
2 tbsp dark soy sauce
2 tbsp light soy sauce (I guna kicap kipas udang)
1 tsp sesame oil
1 tbsp corn starch 
5 dried chili pepper 
Roasted peanuts or cashews for garnish
2-3 tbsp vegetable oil
3/4 cup of water
1 red onion (devide to 4)

Method

Cut the chicken breats into chunks or cubes. Marinated with light soy sauce, sesame oil and corn starch.

Heat oil in a wok over medium heat. Stir in garlic and cook till brown. Add the chili pepper and cook till fragrance. 

Add in marinated chicken and dark soy sauce, stir them well, cook for 3 minutes and pour in the water. Add in the red onion and cook for another 10 minutes or till the gravy thicken.

Garnish with roasted peanuts and you can also garnish with sliced spring onions.


You may have it with steamed hot rice. :)

ASIAN CHICKEN SOUP

Swang mood for days. No ideas to write on. Bland taste. Empty mind. Extremely fast heart beating.

Let's straight to the food for today.

Ingredients

1. 300-400gm chicken (cut into small pieces)
2. 3 shallots (pounded) *
3. 2 garlic cloves (pounded) *
4. 1 thumb size ginger (pounded) *
5. 2 star anises *
6. 1 cinnamon stick *
7. 1 tbsp Sup Adabi powder
8. 3 tbsp vegetable oil (depend on you)
9. 1 carrot (cut into chunks)
10. 2 potatoes (devide by 4)
11. Salt to taste
12. 500-600 ml water (depend on you)



Method

1. Heat oil in a large saucepan over medium heat. Stir in * ingredients and cook till brown or fragrance. Add in Sup Adabi powder and cook for a minute and add in the chicken, cook for 5 minutes or till coated.

2. Pour in water and cook for 15-20 minutes or till the chicken lil bit tender. Add in potatoes follow by carrot and salt and boil till both of them are soft.

3. You can garnish with chop parsley or onion springs and ready to serve.


I had it with fried mackerel (goreng garing-garing tau), red spinach belacan and sambal belacan. No words to describe and I miss this very much.

Honestly, I don't really has any idea how long this feelings will go for. Speechless.

BUTTER CHICKEN

Salam.

Salam Jumaat you all! Did your remember that I was talk about I had butter chicken for my iftar? So today I would like to share a butter chicken recipe. By the way, there are two version of 'Butter Chicken'. One is Indian version and another one is Chinese version. Mine is Chinese version and I'll show you the Indian Butter Chicken.

This is Indian Butter Chicken.


Ingredients

1. 500 gm boneless chicken (chicken breast-tapi i guna semau bahagian sebab beli ayam sekor hehe)
2. 3/4 - 1 cup Evaporated milk (I used F&N brand)
3. 5-6 bird's eye chillies (finely sliced)
4. 1 sprig curry leaves
5. 5 cloves garlic (minced)
6. 1-2 tsp salt
7. 2-3 tbs unsalted butter
8. 1 cup of corn flour (to coat the chicken)
9. 1 tsp salt (to marinate the chicken)
10. 2 cups of cooking oil (to deep fried the chicken)

Method

1. Clean the chicken and drain. Marinate with salt and coat the chicken with corn flour.

2. Heat the cooking oil in a wok or pot, deep fried the chicken till crisp or brown. Once done, put aside.

3. Melt the butter in a wok, add chillies and garlic and mix well till fragrance. Pour the evaporated milk, add salt in the sauce and mix well.

4. Once the sauce boiled, add the curry leaves and chicken. Mix well till the sauce lil bit thicken and ready to serve.

Bukan I potong ayam tu kecil-kecil tapi daun kari I tu besar-besar hahaha. Semua yang datang semua tegur pokok kari I katanya gemok daun-daun dia. Habis, dah mak nye a.k.a tuannye bagi makan minum semua cukup, belai and borak-borak, memang gemok lah dia. Dulu pokok kari ni kat tanah tapi since ada kumbang putih tu menjahanamkan daunnye I tebang lah pokok tu. Pastu anak-anak pokok kari ni punya lah banyak tumbuh. I pon ambil lah sepokok and alih kan ke pasu. Alhamdulillah, cantik berkilat and gemok daun dia.


Sedap makan chicken butter ni dengan nasi panas-panas. Di padankan pulak dengan pucuk keledek tumis...yum yum! Tapi haritu I makan dengan sayur lain hehe. Sayur bandar bukan sayur kampung.


Tengok lah sauce nye, creamy, pekat dan lekat! SNOWY tak gemar makan ayam ni sebab pedas sikit gamaknya. Hari tu bagi dia makan di lap-lapnye mulut dia tu. It's kinda hot because I used the red bird's eye chillies. Yang jenis tu memang pedas. But I mix with normal bird's eye chillies, if not memang tak termakan lah jawabnye!

 Yeay! Finally it's Friday! Ingat esok I nak kemaskan front yard I tu lah. Nak susun semua genting-genting rumah yang tak guna tu so that I can have more space to 'bercucuk tanam'.

INTODUCING MY LOVE AND RECIPE REQUESTED FROM INDONESIA

Salam.

Hi, All! How are you today? I would like to introduce you to my love one and his name is SNOWY . Haha don't blame on me why his name sounds like a girl because am not the one who named him.

Takpe lah, in anyhow.. I still love to call you as SNOWY :) The photo above was taken on the day that I found him. I jumpa dia kat longkang belakang rumah on 14th March 2013. Dia asyik menangis je since malam, and I kata kalau subuh masih ada lagi I will adopt him.


Then subuh tu still ada, jadi I ambil dia. Rupanya dia ni di tinggalkan mak dia. Sian... and paling kesian bila I tengok kaki dia luka macam tertoreh. Besar pulak tu, jadi tak sampai hati nak biarkan.. Sian dia, dah lah takde mak.



I leave him with my neighbour bila I pergi kerja, but now dah tak lagi sebab dia dah besar jadi I tinggalkan dia dalam rumah. He such a good boy sebab dia tak poo poo and tak pee pee merata. The first 3 days I tinggal dalam rumah dia poo poo dalam toilet bilik depan. Then after three days dia poo poo and pee pee siap-siap kat luar rumah in the morning sebelum I pergi kerja. Bagus kan? Saaaayyyaaanng dia!!

Siang je tidur! Siang je tidur! Malam main!


Jangan salah faham, mata dia jadi biru sebab kena flash camera bukan pakai lens ye!! hehehe


Malam tadi bagi dia mandi sebab kotor sangat dia main kat luar tu dengan kucing jiran depan rumah. Dah la susah nak mandi, meraung-raung! Eeeee geram!

Marilah kita cerita pasal makanan pulak. This recipe has been requested by one of my friends dari Indonesia. Nama dia Novii. Dia request recipe Char Koey Teow (Koey Teow Goreng) ni dua hari lepas. Jom kita tengok recipe nya.



Bahan-bahan (untuk seorang atau dua orang)

1. 500gm koey teow halus (I tak suka yang lebar)
2. 3 ulas bawang putih (di cincang halus)
3. 2 sudu besar minyak masak
4. 1 biji telur (di pukul sedikit)
5. Segenggam taugeh
6. Dua batang daun kucai (chinese chives - di potong 3cm)
7. 6-7 ekor udang size XL di buang kepala dan kulit
8. 1 sudu besar sos ikan
9. 1 sudu kecil kicap pekat
10. 1 sudu besar cili kisar

Bahan hiasan

1. Daun bawang (di hiris nipis)
2. Jeruk cili (chili pickle - kalau suka)

Cara-cara

1. Panaskan minyak masak dalam kuali. Masukkan bawang putih dan tumis hingga naik bau dan keperang-perangan. Masukkan cili kisar dan tumis sehingga sedikit garing.

2. Setelah naik bau, masukkan kicap pekat dan sos ikan. Masukkan telur yang di pukul sedikit dan gaul sebati. Masukkan juga daun kucai dan kacau hingga layu.

3. Masukkan koey teow serta udang. Kacau sehingga bahan tumisan serap ke dalam koey teow (kurang 2 minit) dan akhir sekali masukkan taugeh dan kacau hingga sebati (kurang dari satu minit).

4. Tutup api, masukkan koey teow ke dalam pinggan dan taburkan daun bawang. Sedia di hidang.

Note :

1. Semasa masukkan telur ke dalam kuali, kedudukan mangkuk telur mestilah tinggi dari kuali. Ini adalah untuk mendapatkan telur yang hancur. Dalam masa yang sama, you all mesti sambil kacau bahan tumisan tadi.

2. Tujuan masukkan udang bersama koey teow dan goreng kurang dari dua minit adalah untuk mendapatkan rasa udang yang segar dan kenyal.

3. I suka taugeh I crunchy sebab tu I masukkan at the end and kacau tak sampai satu minit. :)
